So we’ve been trying to eat healthier around here….well this week so far anyway. I’m actually feeling pretty great and have behaved myself all week! But Friday’s are typically our pizza night or nacho night…and beer and wine…you know ‘treat night’. Kind of like a reward for a hard weeks work. So I was still craving something ‘snacky’ for tonight’s meal. I decided to try to lighten up our traditional nachos and baked off some lovely sweet potato fries, which I topped off with black beans, green onions, shredded bbq chicken spiked with a bit of chipolte, my homemade pickled jalepenos, red peppers and just a weee bit of cheese.…

Chicken Tortilla Soup with Avocado and Lime (Whitewater Cooks)
OK first don’t laugh at my poorly staged picture. It’s been busy around here – I haven’t felt like I’ve had time really to update this site – but I loved this simple easy to prepare soup and figured I would try to share the recipe tonight – bad picture and all! Life has caught up with us lately now that the kids are back to school and activities the calendar seems to fill up quickly and us parents are left pretty tired by the end of most days! In fact my husband and I sometimes have trouble staying up past 10 – we are definately getting old. I’ve been…

BBQ Chicken Pizza
I’m trying to use up what we have in our freezer, and I had taken out a package of ground chicken this morning that we bought from a local farmer this year. I wasn’t quite sure what I was going to do with it. My problem is I usually have too many ideas going around in my head for recipes that I find it hard to narrow down and commit. The choice was made when I saw I also had a bit of very ripe fresh pineapple to use up in the fridge so I decided a pizza may be in order. We make homemade pizzas quite a bit in our…

Hoisin Chicken Summer Rolls with Mango
It’s easy to fall into a cooking rut while renovating your kitchen. You could tell yourself things like, “how can I cook without a kitchen” and then proceed to put all the take out joints in your area on speed dial. I have to admit, many days I have fallen into this rut. Although I have to say, I’m growing rather sick of processed take out food. I decided to step out of my rut and use my creativity and cook up some good food, that is good food that does not require an oven or stovetop – or hopefully not much cleanup (our bar sink downstairs is rather small…

Hit ‘N’ Run Panbaked Chicken (Jamie Oliver)
I have decided to attempt to find time to update my blog! It’s been a long while since I posted and I still have friends saying they visit my blog on occasion for recipes and wish I would post some new material. I have to admit I still refer back as well when I don’t feel like digging through recipe books. 31 Hockey games this month! Yes that’s how many we counted between the 3 boys! It’s been pretty hectic around here trying to juggle work, hockey, housework, cooking, the never ending piles of laundry – yes it’s all been quite the whirlwind. I’m on the countdown until April when…

“Oh So Easy” Chicken Wings
Sometimes simple is best…I often find that in the kitchen. We had company over this weekend, and I had a package of wings leftover from the weekend that had to be put to use tonight. 2 boys have soccer tonight, so I wanted something quick that the boys could eat before we hit the soccer field tonight. I usually bake my wings (not because I don’t love the fried ones), just because I don’t love the extra calories that come along with frying. All I did for these was toss about 24 split chicken wings with the following: – approx. 2 tbsp soy sauce – about 2-3 tsp montreal steak seasoning – another…

Finger Lickin’ Apricot Chicken
This is a perfect weeknight meal for all you busy Mom’s out there. I got this recipe, years ago from my Mom, and it is an old standby that the kids love..for one of those nights when you just want something super simple to prepare for supper. There are hardly any ingredients, and you may just have all these hanging out in your cupboard. This was one of those nights for me, I had no idea what I was going to make for supper – busy day, just wanted something quick and simple that the kids would enjoy. The sauce recipe – makes enough to coat roughly 10 chicken drumsticks..I…

Hoisin Chicken Lettuce Wraps
This post name comes from my husband, who mentioned after devouring a few of these, that peanuts would be nice here…hmmm good idea honey. My husband doesn’t cook much, mostly because he works ridiculous hours and is hardly here…but I have to admit, after sprinkling some crushed peanuts over these to finish – they really hit the spot! I also garnished these with some fresh julienned basil (the basil was a last minute idea – and I am so glad that I added, really complimented the flavours…oh and of course – don’t forget the crushed peanuts (idea courtesy of Zander). My Mom used to make these when we had people…

Tasty Chipolte Chicken Taco Bowls
Spring Break is over and the kids are back to school, back to routine. The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted. I can’t wait to see the leaves on the trees and the flowers growing again. My kids absolutely love tacos…and so do I. Although I love to add onions, peppers, even beans to my meat mixture…the kids aren’t so fond of that. So my solution – two pans…one with meat…plain for the kids…and the other for Alex and I – with the meat and whatever my heart desires…added in…
