Maple Chipotle Glazed Salmon with Mango Salsa

I had some mangos that were ripe that I needed to use up, and that is what inspired me to make this Maple Chipotle Glazed Salmon with Mango Salsa. Oven-roasted salmon with a sticky sweet and spicy glaze. Serve over rice and top with a sweet delicious mango salsa adorned with fresh lime juice. A perfect, light, and healthy meal.

Mangos are one of my favorite fruits! I love them plain. They are great too served with lime juice and chili sprinkled over. Another thing that I love to make with mangos is salsa. It’s a great way to jazz up a simple dish like this Maple Chipotle Glazed Salmon with Mango Salsa.

I’ve kept the mango salsa today pretty simple with just chopped mangos, cilantro, lime juice, and a little bit of very finely chopped red onion. You could throw in some chili peppers if you like, or some avocado would be good. The salmon had some spice in the glaze already so I didn’t feel it needed more in the salsa.

I’ve oven baked the salmon here today and topped with sticky sweet and spicy glaze to finish made with butter, maple syrup, chipotle in adobo, lime juice, chili powder, garlic, and some soy sauce. You can adjust the chipotle to your taste, but the amount we used here I didn’t find too spicy – and the kids didn’t complain that I was trying to burn their mouths off so that is a good sign that it wasn’t too spicy. I love spicy foods – so sometimes I get a little carried away.

Chipotle Maple Glazed Salmon with Mango Salsa

Ingredients
  

For the Salmon

  • 2 lb Salmon fillet
  • salt
  • pepper
  • butter (to dot the top with)

For the Glaze

  • 4 tbsp butter
  • 6 tbsp maple syrup
  • 2 tbsp fresh lime juice
  • 2 whole small cloves garlic, minced
  • 1 tsp chili powder
  • 2 tbsp soy sauce
  • 2 whole chipotle in adobo, chopped + 1 Tbsp of Adobo sauce

Mango Salsa

  • 2-3 whole mangos, peeled and cubed (pit removed)
  • 2 tbsp fresh squeezed lime juice
  • 2 tbsp finely chopped cilantro
  • 2 tbsp finely chopped red onion
  • tiny pinch of salt

Instructions
 

For the Glaze

  • Put all the ingredients into a small saucepan. Let cook on a simmer to reduce and thicken. About 5 minutes or so.

For the Salmon

  • Preheat oven to 425F
  • Put the salmon on a parchment lined baking sheet, skin side down
  • Make sure the salmon is dry (pat down with paper towel if need be).
  • Dot the top of the salmon with butter pieces
  • Bake the salmon for 8 minutes and remove
  • Top the salmon with glaze and bake for about 2-3 minutes longer until just done.

Mango salsa

  • Toss the mango and all ingredients together. Taste and adjust seasoning if need be.

To serve

  • Serve the salmon over rice, topped with mango salsa. Or you can serve salmon on its own topped with the salsa.
