Finger Lickin’ Apricot Chicken

This is a perfect weeknight meal for all you busy Mom’s out there.  I got this recipe, years ago from my Mom, and it is an old standby that the kids love..for one of those nights when you just want something super simple to prepare for supper.  There are hardly any ingredients, and you may just have all these hanging out in your cupboard.

This was one of those nights for me, I had no idea what I was going to make for supper – busy day, just wanted something quick and simple that the kids would enjoy.

The sauce recipe – makes enough to coat roughly 10 chicken drumsticks..I had a few more than that, and decided to make extra so the kids could take some to school for lunch tomorrow, but I will give you the recipe for roughly 10-12 chicken drummettes – if you would like more, just make extra sauce.

These are great just served with some rice (to soak up the extra sauce) and a simple side salad.  For a leaner version of these recipe, you can use chicken thighs or drumsticks with the skin removed – either way is good.

Mix together:
 – 1 cup apricot preserves (I use the reduced sugar version)
 – 1/2 cup BBQ sauce
 – 2 tbsp reduced sodium soy sauce
 – cilantro (to garnish), optional

Place the chicken in a casserole dish and pour sauce all over, mixing to coat.  Place in a 375F preheated oven and bake for about 45 minutes until chicken is done (basting a couple times during the cooking process).  Garnish with a little chopped fresh cilantro if you like.

Now – how easy is that – put your feet up Moms, you deserve it!  Enjoy!
