Mexican Shrimp Cocktail

Tomorrow is Cinco de Mayo…which I’m using as an excuse to make this Mexican Shrimp Cocktail. Personally I don’t really celebrate Cinco de Mayo in Canada, but I’m always looking for a reason to cook Mexican food as it is one of my absolute favorites!

If you are celebrating Cinco de Mayo tomorrow I have some great Mexican recipes on this site to try like these Mushroom Poblano Tacos that you could serve with Homemade Corn Tortillas and Guacamole with Roasted Poblano perhaps washed down with Mango Margaritas, then add this delicious Mexican Shrimp Cocktail in for the appetizer! Oh wow, now that sounds like a great meal.

I first made a Mexican Shrimp Cocktail about 4 years ago for my oldest son’s high school graduation party. I can’t believe that it has been that long since he graduated and that he will finish his last year of University this year! Time seriously goes so quickly.

This dish looks great served in pretty Margarita glasses if you have them. This is a great appetizer for company or a light snack for the patio this summer. Traditionally in Mexico Shrimp Cocktails are served with saltine crackers on the side – so feel free to add those into the mix. I like to serve mine up with extra lime wedges and hot sauce.

I’ve added in a little Canadian twist here using some Clamato juice in the mix. I think it adds a great taste to the dish.

Mexican Shrimp Cocktail

Ingredients
  

  • 1.5 lbs cooked shrimp, medium size
  • 1/2 cup chopped cilantro
  • 1/2 cup finely chopped cucumber, seeds removed
  • 1/2 cup finely chopped red pepper
  • 1/2 cup white onion, finely chopped
  • 1-2 whole small cloves garlic, minced fine
  • 1 whole tomato, seeds removed and diced
  • 1/2 cup fresh squeezed lime juice
  • 1/4 cup fresh squeezed orange juice
  • 1/2 cup ketchup
  • 1/2 cup clamato juice
  • 1 whole serrano pepper, finely chopped
  • 1 whole avocado, diced
  • hot sauce to taste
  • salt to taste
  • pepper to taste

To serve

  • hot sauce
  • saltine crackers
  • lime wedges

Instructions
 

  • Place shrimp and chopped veggies in a large bowl. Mix with the citrus juices, ketchup, clamato and seasonings. Gently toss well.
  • Serve chilled in nice margarita glasses with lime wedges, saltine crackers and extra hot sauce.
