Dutch Baby with Cinnamon Apples

This Dutch Baby with Cinnamon Apples is a delicious treat for breakfast. In fact, I would almost go so far as to say that it is like dessert for breakfast! With everything going on the world right now, I think we all deserve a little comfort, don’t we?

The world is a bit ‘mad’ right now with everything going on, and I like many so many of you, am at home isolated with my family. A few months ago, I would have never guessed that we would all be on lockdown in our homes with schools and restaurants closed and a health scare, beyond anything I have ever seen.

Amidst all the uncertainty, I am thankful that we have our health for now. This has also allowed for a slow-down from life’s responsibilities.

This year has been a difficult one for our family, I had taken a bit of a hiatus from this blog in order to focus on what was needed from me at the time. I am finding comfort now again in cooking and would like to continue to share my journeys in the kitchen. I think so many of us are returning to the kitchen now, and that is a wonderful thing!

What is a Dutch Baby

Dutch babies are basically a large popover – almost like a crepe meets a Yorkshire pudding. They are sometimes also referred to as German Pancakes. However you choose to explain to them, they are delicious and great to cook for a crowd as they all cook in one pan.

How to cook a Dutch Baby

I like to use a cast iron pan to cook these Dutch Babies with Apples and Cinnamon. My cast iron pan is a 12 inch one. If you have a smaller one, just 1/2 or reduce the recipe as you see fit. Melt a good amount of butter and pour in your Dutch baby mixture. I also like to start these Dutch babies in a cold oven. Set your timer for 20 minutes exactly and don’t peek until the timer goes off. Although I do love to leave the oven light on to watch them miraculously rise to perfection! One other tip is to make sure that your mixture is well mixed and smooth – and let it rest for at least 20 minutes before you pour it into your cast iron pan for baking.

What to serve them with

We love to serve ours up with some apples that have been sauteed with butter, a little sugar, pinch of salt and a dusting of cinnamon, then slather an extra layer of maple syrup and whipped cream. They are great just with maple syrup alone too though, or any combination of fruits would be equally delicious. You could really mix things up and do a savory version too if you like. Use your imagination – there are so many different ways you could dress these.

Dutch Baby with Cinnamon Apples

Dutch Baby with Cinnamon Apples

This Dutch Baby with Cinnamon Apples is like having dessert for breakfast!
Prep Time 30 minutes
Cook Time 20 minutes
Servings 4 people

Ingredients
  

Batter

  • 6 large eggs
  • 1 cup all purpose flour
  • 1 cup whole milk
  • 1 tsp vanilla
  • 3 tbsp butter
  • 2 tbsp sugar

Cinnamon Apples

  • pinch salt
  • 2-3 whole apples, cored, peeled, and sliced
  • 3/4 tsp cinnamon
  • 1 tbsp butter
  • splash water
  • 1 tsp sugar

To Serve

  • whipped cream
  • maple syrup

Instructions
 

  • Mix the batter ingredients together well until smooth. Let rest for 20-30 minutes
  • While you are waiting for your batter to rest. Melt 1 tbsp of butter in a pan. Add in your sliced apples, sugar, cinnamon and a splash of water. Cook over medium heat until tender and browned a little. Turn off and set aside
  • Melt 3 tbsp of butter in a 12 inch cast iron pan. Pour in your rested batter mixture.
  • Place the cast iron pan in the oven and set the heat to 375F. Set your timer for 20 minutes exactly.
  • While you wait, whip some cream if you like.
  • Remove the Dutch Baby from the oven and serve with apples, maple syrup and whipped cream
