    Best Breakfast Sammies

These are seriously my absolute favorite Breakfast Sammies. The recipe is not my own for the sausage patties, and I’ve included a link to the cookbook they are in, in case you are interested. The boys and I love breakfast sandwiches! Who doesn’t really! Toasted buns, melty cheese, avocado slices, runny yolk eggs, and these homemade sausage patties. Served up with some hot sauce it is a breakfast that dreams are made of. A great weekend breakfast when you aren’t in a rush to get out the door, which I suppose most of us aren’t lately. I call this the Best Breakfast Sammies- because this is my absolute favorite! Better…

Spring Greens Crustless Quiche with Chimichurri

Call it breakfast, brunch, or supper, this Spring Greens Crustless Quiche with Chimichurri is a great way to highlight spring veggies. A beautiful egg and cream custard adorn asparagus, leeks, peas, and of course, I added some bacon in there for good measure. Dot with cheese and bake until just set. Serve this up with a drizzle of Chimichurri sauce and avocado. Quiche is a great make-ahead as it is also great served at room temperature. I only had 4 eggs left this morning and a bunch of beautiful green veggies to use up, so this is where the inspiration for this recipe came from this morning. Quiche is Versatile…

    Dutch Baby with Cinnamon Apples

This Dutch Baby with Cinnamon Apples is a delicious treat for breakfast. In fact, I would almost go so far as to say that it is like dessert for breakfast! With everything going on the world right now, I think we all deserve a little comfort, don’t we? The world is a bit ‘mad’ right now with everything going on, and I like many so many of you, am at home isolated with my family. A few months ago, I would have never guessed that we would all be on lockdown in our homes with schools and restaurants closed and a health scare, beyond anything I have ever seen. Amidst…

Softly Scrambled Eggs with Feta and Parsley

OK, I know – scrambled eggs – really? Do you even need a recipe for that? Trust me – you need to try these Softly Scrambled Eggs with Feta and Parsley I used to dislike scrambled eggs, I found them kind of dry and tasteless. I would’ve much preferred a nice runny yolk instead of an overcooked scrambled mess until I made this recipe. I saw this recipe in a cookbook that I found at the thrift store (yes I love to a thrift shop – especially for cookbooks). The book is called Turkish Flavours, by Sevtap Yuce. It is a wonderful unpretentious book filled with simple and flavorful recipes. Turkish…

Potato Feta Bacon and Scallion Frittata

If there’s one thing I’ve learned as a Mother of three boys – the best way to lure sleepy kids/teenagers out of bed – BACON!  Yep – that’s it!  Once they smell bacon cooking in the kitchen – they seem to come running!  Just a little trick I’ve got up my sleeves! This was the case today when I started to whip up this Frittata..as soon as the bacon hit the pan I had three boys up in my kitchen wondering what was cooking! I have 2 full bookshelves of cookbooks that I’ve been collecting over the years…and I actually de-cluttered and gave away a bunch last month because simply…

    Pumpkin Chocolate Chip Muffins

Tis the season! Here’s a treat for the Back to School lunchbox! This is another great recipe from one of my new Whitewater Cooks cookbooks! I can already tell these will be added to my favourite ‘go to’ cookbook collection – so far every recipe I have tried has been a hit! I left out the nuts from the original recipe because I’m not a huge fan of nuts in my muffins – but feel free to add in 3/4 cup of walnuts and in the original recipe she also topped the muffins with 1/2 cup toasted pumpkin seeds prior to throwing in the oven. These aren’t overly sweet which…

    Mexican Baked Eggs

We leave for Hawaii in two weeks! Hooray! Since we’ll be sporting swimsuits for a good portion of our stay my husband has been trying to watch his carb and sugar intake this month. I’ve been trying to help him out by making meals minus carbs – which as it turns out although challenging – can be very delicious. Last night we had some fish tacos with Mahi Mahi and rather that tortilla wraps we wrapped ours in lettuce leaves – which proved to be delish. On the weekend I made Alex this for breakfast and decided to re-create this morning for myself. Give them a shot! This is kind…

Whole Wheat Fruit and Nut Granola

I can’t take credit for this recipe, as I didn’t change anything.  Although I did mistakenly add the dried fruit into the mixture and into the oven (oops you are supposed to add the dried fruit in at the end) – it still turned out delicious.  I think I am converted!  No more store bought granola for us.  This has fewer calories than most granolas due to a smaller amount of oil and the use of apple juice and maple syrup.  Serve with Milk or Yogurt.  (Recipe courtesy of Rose Riesman) Preheat oven to 300F Mix together:  – 2 cups large rolled oats – 1/2 cup whole wheat flour – 1/2 cup…

    Buckwheat Crepes

Family Day here in Alberta, so I am venturing out to the ski hill with the boys to enjoy the day.  It will be Andrew’s first time on skis, so hopefully I don’t spend the whole day at the bunny hill.  Decided to make the boys crepes this morning, I added half buckwheat flour to the recipe and it turned out great, you could probably add all buckwheat flour if you wanted, but I haven’t tried that yet.  – 1/2 cup all purpose flour  – 1/2 cup buckwheat flour  – pinch salt  – approx. 1 1/4 cups milk.  – 2 eggs – 2 tbsp melted butter – 1 tbsp of sugar (if…
