Caprese Style Grilled Cheese

Who doesn’t love grilled cheese? I think they might be one of our favorites around here. The great thing about them too is they are quick and easy to throw together for an easy lunch or supper. This Caprese Style Grilled Cheese is a great twist to take your grilled cheese game to the next level! Sure a Caprese salad is delicious – but a Caprese Style Grilled Cheese – even better!

These are a great spin on the traditional, filled with Basil Pesto, Baby Arugula, Roasted Tomatoes and Fresh Mozzarella. Make sure you have some great bread for toasting and these come together in no time.

INGREDIENTS:

  • Fresh Mozzarella (4-5 thin slices for each sandwich)
  • French Style Bread (2 large pieces for each sandwich)
  • 2-3 tbsp basil pesto per sandwich
  • a handful of baby arugula per sandwich
  • 2 tbsp butter per sandwich

Spread softened butter on each slice of bread on one side. Spread the other side of each piece generously with basil pesto. Put a thin layer of fresh mozzarella then some roasted tomatoes, then baby arugula, then more mozzarella. Put together and fry over low-medium heat in a pan until the bread is crispy and browned and cheese is melted. Serve immediately.
