Spinach and Artichoke Grilled Cheese

If you are looking to step up your sandwich game – try this delicious Spinach and Artichoke Grilled Cheese.

Who doesn’t love grilled cheese? My kids absolutely love them, and I do too. They are quick, easy and very satisfying. A great addition to a hot bowl of soup, or great just on their own for a quick and easy meal.

I had bought a very large bag of spinach from Costco this week. So I’ve been pretty much trying to put spinach in everything to try to use it up. Luckily fresh spinach cooks down substantially, so it should be gone in no time.

I came up with an idea to make this Spinach and Artichoke Grilled Cheese. Who doesn’t love the spinach, artichoke and cheese combo?  Spinach sauteed in garlic, olive oil and red hot pepper flakes all generously stuffed in a toasty grilled cheese with gooey mozzarella and artichokes. The perfect quick and easy comfort food. These turned out great, and you can feel good serving this to your kids (if you can get them to try it) with the addition of some veggies in there.

So step out of your comfort zone and try a little something different for your next grilled cheese. There are so many combinations you could try!

Spinach Artichoke Grilled Cheese

Spinach and Artichoke Grilled Cheese

Total Time 30 minutes
Servings 1 person

Ingredients
  

  • 2 slices bread
  • 2 tbsp butter
  • 3 cups fresh spinach
  • 1 tbsp olive oil
  • 1 large artichoke heart (canned in oil), sliced
  • 1/2 cup mozzarella, grated
  • 2 cloves garlic, smashed but left whole
  • pinch red hot pepper flakes

Instructions
 

  • In a heavy bottomed pan, heat up your olive oil over medium heat.
  • Add in your garlic cloves and red hot pepper flakes and let cook for a few minutes until fragrant.
  • Add in your spinach and stir and let wilt down for a minute or two.
  • Remove the spinach mixture from the pan and set aside.
  • Butter one side of two slices of bread. Butter side down layer with half the mozzarella, then the spinach (remove the garlic), the artichokes then the rest of the mozzarella. Top with the other piece of bread.
  • Place the bread butter side down back in the pan over medium low heat until toasted on one side. Flip carefully and toast on the other side until browned and cheese is melted. 
  • Serve immediately.
