I have an overflow of nectarines in my fridge right now and was trying to find a way to use them up when I thought of this salad idea. If you haven’t tried Farro before it’s worth a shot. It’s healthy and has a nutty flavour and chewy texture. I had trouble finding it in Bonnyville but our health food store in town actually brought a case in for me. I bought a few new cookbooks by Whitewater Cooks while our kitchen was in the midst of renos and I was so excited to use them as the recipes and photos looked delish! I have never attempted to make a Curried Shrimp Dish on the BBQ. But hey whether your “Glamping” this summer or just not wanting to heat up the house with the stove – I have to say it worked out pretty well. Crazy for Panini’s
I purchased a Panini Maker this month – after much time debating whether or not I would use one – or if it would be added to a collection of unused kitchen appliances cluttering up my cupboard. We leave for Hawaii in two weeks! Hooray! Since we’ll be sporting swimsuits for a good portion of our stay my husband has been trying to watch his carb and sugar intake this month.
