Green Chilaquiles with Fried Eggs

Chilaquiles are a popular Mexican breakfast, typically served with fried or scrambled eggs. These Green Chilaquiles with Fried Eggs are made with homemade tomatillo salsa, crispy homemade corn chips, crumbly feta cheese, and topped with Pickled Red Onions.

What is Chilaquiles?

Chilaquiles is a common Mexican breakfast dish. It consists typically of fried corn tortilla chips with salsa, cheese, and either scrambled or fried eggs.

How to make Homemade Corn Chips

If you have leftover Homemade Corn Tortillas these are a great way to use them up. Any store-bought variety will work great here too.

In a pan with high sides, put enough vegetable oil in order to cover the tortilla pieces to fry. Bring the temperature up over medium heat. Test with the oil to see if it is ready with the end of a wooden spoon, once small bubbles form around when dipped in it is ready. Cut your leftover corn tortillas into chip shapes and place carefully in the oil in batches (not to the crowd). Fry until golden, remove with slotted spoon and place on a paper towel-lined plate. Sprinkle with salt when hot.

Tomatillo Salsa

Making tomatillo salsa is very easy. I make mine by roasted tomatillos, serrano pepper, and garlic under the broiler. Transfer to a blender (with the juices). Add in a pinch of salt, a little water, and blend until pureed. Once done stir in some finely chopped white onion and cilantro.

Tip:

A little cream or Mexican crema drizzled over at the end cuts the tartness of the tomatillos. Similarily some Mexican black beans or avocado are great in here.

Ingredients
  

  • 4 whole eggs
  • 1 1/2-2 cups tomatillo salsa (Salsa Verde)
  • oil
  • fried corn chips a couple handfuls
  • 1/4 cup feta or mexican crumbled cheese to taste

To serve

  • cilantro
  • avocado slices
  • cream or Mexican crema
  • pickled red onions

Tomatillo Salsa

  • 7-10 whole tomatillos, husks removed, rinsed
  • 1 whole serrano pepper
  • 1/4 cup chopped cilantro
  • 1/2 cup finely chopped white onion
  • 1 tsp salt
  • 1/4 cup water
  • 1-2 whole garlic cloves, peeled (small)

Instructions
 

  • In one pan, add your eggs in oil and cook until sunny side up.
  • In another pan, heat up a bit of oil. Add in your tomatillo salsa. Fry for a minute or two then add in your corn chips. Once done layer in your cooked eggs. Top with feta, cilantro and serve with cream drizzled over and avocado slices.

Tomatillo Salsa

  • Put your tomatillos, garlic, water, and serrano on a sheet pan and roast under the broiler until roasted and charred, flipping half-way through. About 5-10 minutes
  • Put your tomatillos, garlic, salt, and serrano (remove the stem) in a blender.
  • Puree until smooth.
  • Stir in your cilantro and onion. Taste and adjust salt if needed.
