I have an overflow of nectarines in my fridge right now and was trying to find a way to use them up when I thought of this salad idea. If you haven’t tried Farro before it’s worth a shot. It’s healthy and has a nutty flavour and chewy texture. I had trouble finding it in Bonnyville but our health food store in town actually brought a case in for me. In the city you may be able to find it in your local grocery store or try the italian market or any mediterranean grocer may carry. This is a great refreshing healthy salad. I bought a few new cookbooks by Whitewater Cooks while our kitchen was in the midst of renos and I was so excited to use them as the recipes and photos looked delish! I have never attempted to make a Curried Shrimp Dish on the BBQ. But hey whether your “Glamping” this summer or just not wanting to heat up the house with the stove – I have to say it worked out pretty well. Crazy for Panini’s
I purchased a Panini Maker this month – after much time debating whether or not I would use one – or if it would be added to a collection of unused kitchen appliances cluttering up my cupboard. We leave for Hawaii in two weeks! Hooray! Since we’ll be sporting swimsuits for a good portion of our stay my husband has been trying to watch his carb and sugar intake this month.
