SAUCES AND DIPS

Salsa Ranchera

Salsa Ranchera is a great basic tomato-based table sauce that can be used to serve with tacos, huevos rancheros, or just served with corn chips! I roughly use a classic…

Funky Farro Salad with Necatarines Hazelnuts and Mint

    August 21, 2014 / No Comments

I have an overflow of nectarines in my fridge right now and was trying to find a way to use them up when I thought of this salad idea. If you haven’t tried Farro before it’s worth a shot. It’s healthy and has a nutty flavour and chewy texture. I had trouble finding it in Bonnyville but our health food store in town actually brought a case in for me. In the city you may be able to find it in your local grocery store or try the italian market or any mediterranean grocer may carry. This is a great refreshing healthy salad. Perfect for a hot summer’s day sitting…

    Simple Summer Salad

    August 20, 2014 / No Comments

I bought a few new cookbooks by Whitewater Cooks while our kitchen was in the midst of renos and I was so excited to use them as the recipes and photos looked delish! Somehow – somewhere – I’ve managed to misplace them? I’ve looked far and near (well all over my house anyway) where the heck did I put them? Don’t you hate losing things! Anyway – I recall seeing a picture of this salad in one of the books – I sorta remembered what was in it. So this is my rendition from that inspiration. Now wish me luck finding those lost cookbooks – because this salad was fantastic!…

    Tasty Taco Stuffed Shells

    August 19, 2014 / No Comments

Oh My! I have a kitchen again! After a long two months of renovations I was sooooo happy to have a kitchen back this weekend. It was awesome. I’m in love. I told my husband I feel like a princess and I just wanna hang out in there all day it’s so pretty! Yep – it was a great weekend. My husbands family decided to come up for an impromptu visit so it gave me a great excuse to hang out in the kitchen and cook and entertain..my mother in law was really sold by the end of the weekend that I deserved this grand kitchen and would put it…

Roasted Potato Salad with Maple Dijon Vinaigrette with Grilled Fish Tacos

    July 22, 2014 / No Comments

Well this isn’t really an exact recipe per say, like with measurements and all that jazz. Frankly measuring somedays annoys me. I also have no idea where measuring cups or spoons are with our kitchen out of order in this renovation mess – but trust me – you can do this without measurements – just go with it. I’ve been craving pasta salad! OK so why make potato salad you say – well lets just say I don’t want to ruin my nice pots to boil water on the BBQ while we don’t have a stove – so I decided to give up on my pasta dreams and settle for…

Coconut Curried Shrimp on the BBQ with Cardamom Scented Rice

    July 8, 2014 / No Comments

I have never attempted to make a Curried Shrimp Dish on the BBQ. But hey whether your “Glamping” this summer or just not wanting to heat up the house with the stove – I have to say it worked out pretty well. Throw a little rice in the rice cooker and you have a great meal. I’m not a huge ‘kitchen gadget’ type girl, but I do love my rice cooker and would recommend one to anyone. I picked mine up for 10 bucks at a garage sale years ago and we have definately made use of it. Ingredients: – 25-30 Jumbo Prawns Shelled and Deveined– 2 TBSP butter, diced…

It’s easy to fall into a cooking rut while renovating your kitchen. You could tell yourself things like, “how can I cook without a kitchen” and then proceed to put all the take out joints in your area on speed dial. I have to admit, many days I have fallen into this rut. Although I have to say, I’m growing rather sick of processed take out food. I decided to step out of my rut and use my creativity and cook up some good food, that is good food that does not require an oven or stovetop – or hopefully not much cleanup (our bar sink downstairs is rather small…

    Linguini Shrimp Fra Diavolo

    July 5, 2014 / No Comments

Stay tuned friends. I have decided to go back to blogging. I’m hoping one day that something will transition to enable me to doing something with ‘doing what I love’ which is cooking, creating, inspiring. For now, I just aim to continue to create, share and journal my love of all things food and cooking. We are renovating our kitchen! Yes, I currently have no kitchen – so probably not the best of times to decide to start back up with my blog. Thankfully it’s summertime here in Alberta so the BBQ has been a lifesaver, but I cannot wait until this whole renovation project is finished – fingers crossed…

    Crazy for Panini’s

    March 13, 2014 / No Comments

I purchased a Panini Maker this month – after much time debating whether or not I would use one – or if it would be added to a collection of unused kitchen appliances cluttering up my cupboard. I’m so happy I decided to do it. Turns out this is an awesome appliance for quick dinners and really easy for the kids to use when Mom’s not around to cook. Also – although most times I find sandwiches extremely boring – Panini’s can bring out the creativity in you – as so many combinations would be delish! I just had to share my pretty picture of a lunch last week –…

We leave for Hawaii in two weeks! Hooray! Since we’ll be sporting swimsuits for a good portion of our stay my husband has been trying to watch his carb and sugar intake this month. I’ve been trying to help him out by making meals minus carbs – which as it turns out although challenging – can be very delicious. Last night we had some fish tacos with Mahi Mahi and rather that tortilla wraps we wrapped ours in lettuce leaves – which proved to be delish. On the weekend I made Alex this for breakfast and decided to re-create this morning for myself. Give them a shot! This is kind…

Curry Night! Veggie Curry (Keralan) and Beef Kofta

    February 11, 2014 / No Comments

I think that Jamie Oliver and I may be long lost soulmates. I mean not in a romantic way but I think we’d get along well. I loved his last cookbook I purchase a few weeks back so much that I picked up his other new book titled, Jamie’s 15 Minute Meals. Just flipping through the pictures had me drooling – while at the same time wondering if I could really pull some of these dishes together that quickly. I like Jamie’s style of cooking, not fussy but with maximum flavour and great ingredients. Tonight I thought I’d give a couple of his curries in the book a whirl. We’ve…
