Sesame Noodle Bowls

These Sesame Noodle Bowls are great for when you really don’t feel like cooking. They pretty much take about as long to make as to cook your noodles, so super quick. I serve them cold (salad style), and you can pretty much layer in any veggies that you like in here. This dish is vegetarian and vegan friendly too, however, if you would like to add some protein in, feel free.

Anyone else getting sick of quarantine life? Although I’m trying to stay positive, I have to admit, it gets you down somedays. I miss my family and friends and just wanna hug everyone and hang out again. I sure can’t wait until that day comes again.

We have been making a lot of comfort food lately, but in the few days this month that I’ve put jeans on to run for groceries, I’m thinking I should add some more veggies into my diet. These bowls are packed with veggies and just a few noodles in there make them extra delicious. I mean seriously I can’t go totally without carbs – can I? It’s all about balance I say.

So pull out your veggie drawers and clean out your fridge. Boil a few noodles, whip together this easy sauce and supper is served. I hope it brightens your day. Hang in there everyone! This too shall pass!

Sesame Noodle Bowls

Sesame Noodle Bowls

Servings 4 people

Ingredients
  

Sesame Dressing

  • 1/4 cup tahini
  • 1/4 cup warm water
  • 1/2 bunch cilantro
  • 1 clove garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp maple syrup
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • Sriracha (to taste)

Veggie Noodle Bowls

  • 225 Grams Spaghettini (or other pasta of choice)
  • finely shredded purple cabbage
  • sauteed asparagus
  • sauteed mushrooms
  • shredded carrots
  • sliced cucumbers
  • cilantro
  • toasted sesame seeds

Instructions
 

  • In a food processor, whiz up all the ingredients for the dressing. If you don't have a food processor, chop the herbs, garlic, and ginger fine and mix together wel with the rest of the ingredients. Taste and adjust the seasoning as you like.
  • Cook the noodles in salted water until al dente. Drain and rinse under cold water.
  • Toss the noodles in half of the sauce
  • Layer the bowls with a few noodles and pile in the veggies of choice. Drizzle with a bit more dressing and sprinkle with sesame seeds to serve.
