Bacon and Potato Tacos with Roasted Poblano Guacamole

You can pretty much put anything delicious in a taco. These Bacon and Potato Tacos with Roasted Poblano Guacamole were inspired by sifting through my fridge trying to use up what we had in there. I had made some Guacamole with Roasted Poblano and had some frozen corn tortillas so I figured that tacos were a must! I love how easy and quick and adaptable they are.

These Bacon and Potato Tacos with Roasted Poblano Guacamole are so good. Corn tortillas filled with bacon and potatoes seasoned with some garlic and serrano pepper and then topped with some grated pecorino romano and doused of course in hot sauce.

I hesitated to post these at first as I was unhappy with my photography. I bought myself a used professional camera a few months back, with the thought that my photos would instantly be so amazing…but it was not as easy as I thought, to say the least! I’m thinking I may need to register myself in a course to learn what all these little buttons and settings do, so please bear with me until then.

This isn’t much of a recipe, more of just another idea of what to stuff in a taco. For quantities just use as much as you would like in your tacos. Don’t be shy with the bacon. You will need the following:

  • Bacon
  • Baby Potatoes, chopped in halves or quarters I like the yellow-fleshed ones for these
  • Garlic
  • Serrano (Optional)
  • Corn Tortillas
  • Pecorino Romano
  • Guacamole with Roasted Poblano
  • Hot Sauce (Optional)

Parboil your potatoes until almost finished. While those are working you can fry up some bacon. Once the bacon is half-way cooked throw your potatoes into finish cooking and gets crispy in all that lovely bacon fat. A few minutes from completion throw in some minced garlic and minced serrano pepper if you desire. Taste and add some salt to taste. Heat up some corn tortillas, fill them up with the potato bacon mixture, and a good heaping spoonful of guacamole. Grate some pecorino romano over the top and hot sauce if you so desire.

Not complicated but delicious. And yes I know I do post a lot of taco recipes. I make no apologies.
