Whole Wheat Fruit and Nut Granola

I can’t take credit for this recipe, as I didn’t change anything.  Although I did mistakenly add the dried fruit into the mixture and into the oven (oops you are supposed to add the dried fruit in at the end) – it still turned out delicious.  I think I am converted!  No more store bought granola for us.  This has fewer calories than most granolas due to a smaller amount of oil and the use of apple juice and maple syrup.  Serve with Milk or Yogurt.  (Recipe courtesy of Rose Riesman)

Preheat oven to 300F

Mix together:

 – 2 cups large rolled oats
 – 1/2 cup whole wheat flour
 – 1/2 cup packed brown sugar
 – 1/4 cup apple juice
 – 1 tsp cinnamon
 – 1/2 tsp ground ginger
 – 3 tbsp veg oil
 – 3 tbsp maple syrup
 – 1/2 cup chopped nuts of choice (I used almonds and walnuts)

Mix all of this together on a baking sheet covered in foil and sprayed with a little non-stick cooking spray.  Bake for 35 minutes, stirring once half way through to prevent burning (at 300F)

Mix in (you can really use any dried fruit you have or like):
 – 1/4 cup chopped dried dates (use kitchen scissors coated with a little cooking spray to cut
– 1/4 cup chopped dried cranberries

Let cool to room temp and store in an airtight container.
