We were going to take the kids out to a movie last night – but instead decided to save some cash and rent a few at home – and I decided to make some Thai Food to go along with. I actually prefer to stay home sometimes and watch a movie in the comforts of home – you can wear your pj’s, cozy up on the couch – and make some kick ass movie night snacks for a fraction of the cost. When we were kids my Mom used to take us to the movies – very occasionally. Mom used to cut costs and have us ‘sneak’ in our own…

Pumpkin Chocolate Chip Muffins
Tis the season! Here’s a treat for the Back to School lunchbox! This is another great recipe from one of my new Whitewater Cooks cookbooks! I can already tell these will be added to my favourite ‘go to’ cookbook collection – so far every recipe I have tried has been a hit! I left out the nuts from the original recipe because I’m not a huge fan of nuts in my muffins – but feel free to add in 3/4 cup of walnuts and in the original recipe she also topped the muffins with 1/2 cup toasted pumpkin seeds prior to throwing in the oven. These aren’t overly sweet which…

Mediterranean Eggplant, Chickpea, Farro and Za’atar Salad
2 more days and the kids are back to school! It’s hard to believe summer has already come to an end – and we are already feeling the cooler fall temps! Summer is much too short in Alberta. I have the next couple days off and am taking it to catch up around the house and maybe do a little lunchbox baking and just get organized for next week when it’s back to schedules and running the kids around. It will be a little different this year as we now officially have a teenager with a driver’s license! He is going to take over the chore of driving the kids…

Eggplant Rolls and an Italian Feast!
These were good. Really Really Good! I was at the grocer’s today with a friend and noticed some good looking eggplant in the veg section. It reminded me of a recipe I found on Pinterest from another blog called Not Enough Cinnamon I decided to grab some for tonights dinner…I’m so glad I did! These were great. I made tweaked the recipe ever so slightly (basically just adding more cheese) – yep I have a problem. I also poured in a little of Whitewater Cooks BEST Basil Dressing For the way I made it you will need the following: – 2 large eggplants – 2 cups of ricotta cheese – About…

Crispy Fish Tacos with Chipolte Slaw, Guacamole and Pickled Radishes
The electrician came today!! Woo hoo! Dance of joy! Our dishwasher is officially hooked up! Although the majority of our kitchen has been done for the past week we were still waiting on an electrician to come in to hook up a few things (most importantly the dishwasher) – geesh I forgot how much work it was to wash all those dishes each day! I also had a cool delivery from my favorite spice company Silk Road Spices I ordered a new spice that is supposed to be ‘all the rage’ right now – called Fennel Pollen..I’ll let you know how I make out with that – it does smell divine! But…

BBQ Chicken Pizza
I’m trying to use up what we have in our freezer, and I had taken out a package of ground chicken this morning that we bought from a local farmer this year. I wasn’t quite sure what I was going to do with it. My problem is I usually have too many ideas going around in my head for recipes that I find it hard to narrow down and commit. The choice was made when I saw I also had a bit of very ripe fresh pineapple to use up in the fridge so I decided a pizza may be in order. We make homemade pizzas quite a bit in our…

Tuscan Bread Salad with the BEST Basil Vinaigrette
You are going to want to grab a pen! No, seriously I think this is one of the best salad dressings I have made! Make it – thank me later! This Tuscan Bread Salad with the BEST Basil Vinaigrette is from a cookbook by Shelley Adams called Whitewater Cooks I bought all three of her books a few months back and proceeded to lose misplace them. I actually re-ordered them because I searched everywhere with no luck. My husband cleaned the garage on the weekend and found them (go figure)! Why were they in the garage – don’t ask. I guess when the new ones come in someone will be…

Quick Pickled Radishes
Radishes I feel are somewhat of an under appreciated, underused vegetable. I found a beautiful Rainbow Radish Mix that I picked up at our grocers this week and I was trying to think of a use for them, so not to waste. I decided to make quick pickled radishes – these take minutes to make and would be a great addition to sandwiches, tacos – or even just a few on your plate. Crunchy and refreshing – lets not forget the humble radish. I found this recipe on a site called Garden Therapy. The only thing I switched out was the vinegar. It called for apple cider vinegar which I…

Blueberry BBQ Glaze
I love days when there is nothing on the schedule. It is a glorious feeling to wake up and leisurely make coffee, read a magazine, fiddle in the kitchen, stay in your jammies if you like. Those are my favorite days. My husband and I have both been lucky the last few days to have days like that – which we both don’t see very often between work and having 3 children. It was awesome – can we stay here forever? I made an apple cake this morning before running to town to run a few errands with my husband – a recipe I found on another blog called Not…

Smoky Chipolte Corn Chowder with Pancetta
The weather is starting to cool down in Bonnyville. It feels like Fall is on it’s way! I don’t mind Fall weather actually I love the cool crisp air and the colors of the leaves as they change, the only thing I don’t like is the reminder that dreaded winter is just around the corner…and our winters in Alberta are just too long! Colder temperatures always have me thinking of a nice hot bowl of soup. My middle son Jared’s favorite soup that I make is Corn Chowder – since corn is in season right now and there is an abundance of it – I thought it would be a…
