Thai Night and some Hoisin Peanut Sauce

We were going to take the kids out to a movie last night – but instead decided to save some cash and rent a few at home – and I decided to make some Thai Food to go along with.  I actually prefer to stay home sometimes and watch a movie in the comforts of home – you can wear your pj’s, cozy up on the couch – and make some kick ass movie night snacks for a fraction of the cost.
When we were kids my Mom used to take us to the movies – very occasionally.  Mom used to cut costs and have us ‘sneak’ in our own movie snacks (yep we’d have our jackets stuffed with homemade popcorn in brown paper bags, no-name pop, licorice.  As soon as the lights would go out in the theatre my Mom would give us the nudge that we could take out our snacks now.  I have to say the homemade popcorn with real butter beat out the movie theatres any day!  My Mom was pretty genius with saving money when we were growing up.
We made:
Thai Salad Rolls with Vermicelli tossed in a bit of sesame oil, Lettuce, Matchstick Carrots, Mint, Basil and Shrimp
Lemongrass Chicken Wings marinated in Fish Sauce, Garlic, Lemongrass, Ginger or Galangal, Shallots, Brown Sugar, Oil and Lime Juice
A spicy curried veggie noodle soup with red curry paste, lemon grass, lime leaves, chicken broth and coconut milk
and….this really good Hoisin Peanut Dipping Sauce to dip your summer rolls in – it’s dead easy and here’s the recipe – it’s from a Cookbook titled Every Day Thai Cooking by Katie Chin
I didn’t take the time to write down measurements etc. from the rest (really you can’t right down everything you cook) – but I do want to share this sauce with you.

 In a small saucepan mix together:

  – 1/2 cup of Hoisin Sauce
 – 2 Tbsp Creamy Peanut Butter
 – 2 Tbsp Water
 – 1 Tbsp of Rice or White Vinegar

Bring all this to a boil and then remove from heat immediately and place in a serving bowl and sprinkle with crushed roasted peanuts

(we doubled this recipe for our rolls – we really like our sauce around here)

Super easy and perfect for dipping!
