These Spicy Chipotle Shrimp are so good and come together so quickly! Perfect for a weeknight meal or just a quick and easy dinner anytime! You may have had this dish if you have visited Mexico before. It is a popular dish I’ve seen on my visits in restaurants. My husband and I have visited Mexico many times, and besides the beautiful weather, friendly people, and stunning ocean, our other favorite thing about Mexico is the food! Mexican food is one of my favorite cuisines to cook. Exploring some of the traditional foods and preparations has expanded my view on what an amazing cuisine Mexico it is – so many…

Honey Glazed Sriracha Salmon Bowl
These Honey Glazed Sriracha Salmon Bowls are healthy and delicious, a perfect way to serve up a healthy meal, and who doesn’t love a good bowl? The sun is shining and spring is in the air. It’s gorgeous weather here in Calgary today. Doesn’t the sun just make you feel better? It does for me. I’ve been already dreaming about planting some seeds indoors to get ready for the garden this year. I made this really simple but delicious Honey Glazed Sriracha Salmon Bowl today. It’s great for a quick and healthy weeknight meal. Try not to overcook your salmon, it’s easy to do and it’s kind of yucky if…

Crispy Fish Tacos with Chipolte Slaw, Guacamole and Pickled Radishes
The electrician came today!! Woo hoo! Dance of joy! Our dishwasher is officially hooked up! Although the majority of our kitchen has been done for the past week we were still waiting on an electrician to come in to hook up a few things (most importantly the dishwasher) – geesh I forgot how much work it was to wash all those dishes each day! I also had a cool delivery from my favorite spice company Silk Road Spices I ordered a new spice that is supposed to be ‘all the rage’ right now – called Fennel Pollen..I’ll let you know how I make out with that – it does smell divine! But…

Coconut Curried Shrimp on the BBQ with Cardamom Scented Rice
I have never attempted to make a Curried Shrimp Dish on the BBQ. But hey whether your “Glamping” this summer or just not wanting to heat up the house with the stove – I have to say it worked out pretty well. Throw a little rice in the rice cooker and you have a great meal. I’m not a huge ‘kitchen gadget’ type girl, but I do love my rice cooker and would recommend one to anyone. I picked mine up for 10 bucks at a garage sale years ago and we have definately made use of it. Ingredients: – 25-30 Jumbo Prawns Shelled and Deveined– 2 TBSP butter, diced…

Tuna Loins with Sesame Dressing
The picture doesn’t do this dish much credit. It was so good, and so quick and easy to make. You could have a healthy supper on the table in 15 minutes…I swear. This dish requires shashimi grade tuna (if you can find it) so that you can leave the centre nice and rare. It only takes a few minutes to cook the dish. I seasoned my tuna loins with Montreal Steak Seasoning and then seared in a nice hot pan in some olive oil. Once finished place the tuna steak on top of some nice organic mixed greens, and drizzle with the sesame dressing. The dressing is really good, don’t…

Curried Calamari and Green Beans
Well, being excited about my new blog. Thought I would try a new recipe out for supper. Changed a few things to taste and this is what I came up with. My husband and I both enjoyed…and well the kids…they had chicken quesidillas (still can’t get them to try squid). Anyway, here is the recipe, I am also going to attempt to upload a photo of our meal. Curried Calamari and Green Beans – 1 pound calamari (cleaned and cut into rings) – 1/2 pound green beans (washed and tips trimmed) – 1/4 cup of almonds or pine nuts lightly toasted (I used sliced almonds) – 3 tbsp of oil (I used grapeseed…
