This Creamy Pappardelle with Basil and Pea Shoots is truly a 10-minute supper. Perfect for a busy weeknight. By the time your water is boiling and pasta cooked your sauce will be done and ready to toss in the sauce. Throw in some fresh basil and pea shoots for garnish and you will look all ‘fancy’ and impress your family or friends. Little do they know this recipe is dead simple I’m pretty sure an 8-year-old could manage to make it. But don’t tell them that – let them think you fussed, and maybe they will offer to do the dishes. This is more of a method than an exact…

Roasted Beet Orange and Fennel Salad with Pistachios
Roasted Beet Orange and Fennel Salad with Pistachios a delicious and healthy salad to add to your weekly menu. It’s been rainy and cold here in Calgary the last week or so. It feels like mother nature may have forgotten about fall and kicked up right into winter! I’m optimistic that we may still see a few warm days before the snow sets in, hopefully. I try to visit the local farmers market here in Calgary once a week especially during the summer months when there is so much fresh produce available. I felt a little sad my last trip there as I realized that soon winter would be here…

Chicken in Milk
It was a busy weekend and I was super tired out today and will admit the last thing I felt like doing was cooking. This Chicken in Milk recipe is a fantastic one when you are feeling that way, as it comes together pretty quickly and without much effort, yet it produces pretty fabulous results. The original recipe comes from Jamie Oliver. I haven’t modified it really much besides the fact that I only use one lemon (I think the original recipe calls for 2). It is one of my favorite ways to prepare chicken. It sounds a little odd at first glance to cook a chicken in milk, the…

Easy and Quick Homemade Buns
I’ve been using this recipe for Easy and Quick Homemade Buns for some time now. It’s super easy and comes together quick! I usually double the recipe, because the boys eat these up rather quickly around here so feel free to double the recipe as well if you have ravenous teenagers at your place too! You can sub out some of the white flour for whole wheat if you like. – 1 envelope of instant yeast – 1 1/4 cup warm water – 1/3 cup oil (I used olive oil) – 1/4 cup sugar (you could sub honey, just reduce the amount by a little) – 1 egg – 1…

Loaded BBQ Chicken Sweet Potato Fries
So we’ve been trying to eat healthier around here….well this week so far anyway. I’m actually feeling pretty great and have behaved myself all week! But Friday’s are typically our pizza night or nacho night…and beer and wine…you know ‘treat night’. Kind of like a reward for a hard weeks work. So I was still craving something ‘snacky’ for tonight’s meal. I decided to try to lighten up our traditional nachos and baked off some lovely sweet potato fries, which I topped off with black beans, green onions, shredded bbq chicken spiked with a bit of chipolte, my homemade pickled jalepenos, red peppers and just a weee bit of cheese.…

Linguini Puttanesca
I’ve decided to get back to food blogging. Stay tuned as I switch websites and update this with many tasty treats…..Here’s an oldie to tide you over until then: Rumor has it that this pasta was created long ago by the women of the night to lure clients in with the smell of garlic and anchovies and olives….it definitely lures me in – although I have a problem when it comes to pasta – a serious problem. Here’s what you need: – Anchovies or Anchovy Paste about 2 tbsp of paste or a 2-3 anchovies – 4 cloves Garlic – 1 large handful of Kalamata Olives (or another variety would…

Potato Feta Bacon and Scallion Frittata
If there’s one thing I’ve learned as a Mother of three boys – the best way to lure sleepy kids/teenagers out of bed – BACON! Yep – that’s it! Once they smell bacon cooking in the kitchen – they seem to come running! Just a little trick I’ve got up my sleeves! This was the case today when I started to whip up this Frittata..as soon as the bacon hit the pan I had three boys up in my kitchen wondering what was cooking! I have 2 full bookshelves of cookbooks that I’ve been collecting over the years…and I actually de-cluttered and gave away a bunch last month because simply…

Pasta Carbonara
Carbonara has to be one of my favorite pasta dishes of all time. Not only is it delicious, it’s also super quick to make with minimal ingredients that you may just have laying around already. When you feel like something indulgent, this is it! My boys actually used to fight for seconds when I made this. So if you have growing teenagers, you may want to double this recipe…otherwise, this should serve about 4 people (or 1 teenage boy). In my opinion, there are a few key ingredients to making a good carbonara. The first being good pasta (my favorite brands for this are Barilla or De Cecco). You also…
