Spring Break is over and the kids are back to school, back to routine. The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted. I can’t wait to see the leaves on the trees and the flowers growing again. My kids absolutely love tacos…and so do I. Although I love to add onions, peppers, even beans to my meat mixture…the kids aren’t so fond of that. I had some Gorgonzola cheese in the fridge that I had to use up, so I decided to make this Cobb Salad with Lemon Dill Dressing. I love the presentation of a Cobb Salad – great for a summertime supper on the patio (although we still have snow on the ground here). Traditionally this Cobb Salad with Lemon Dill Dressing should also include avocadoes, but I didn’t have any, so we went without. Really though you could pretty much put whatever you want in here. I know every Mom for sure likely has a banana loaf/muffin recipe. I tend to try new ones each time, but this one I really enjoyed and have made a couple times this month. Fish “Tacos” in Pitas with Kick-Butt Creamy Dressing
This recipe is improvised from a few different recipes. I found the white sauce (dressing) recipe online…thought I would try it drizzled over our fish “taco’s” in pitas (I used pitas instead of tortillas, because that is what we had on hand).
