Chipotle Maple Glazed Salmon with Mango Salsa
Maple Chipotle Glazed Salmon with Mango Salsa oven-roasted with a sticky sweet and spicy glaze. Serve over rice. A perfect, light, and healthy meal.

For the Salmon
- 2 lb Salmon fillet
- salt
- pepper
- butter (to dot the top with)
For the Glaze
- 4 tbsp butter
- 6 tbsp maple syrup
- 2 tbsp fresh lime juice
- 2 whole small cloves garlic, minced
- 1 tsp chili powder
- 2 tbsp soy sauce
- 2 whole chipotle in adobo, chopped + 1 Tbsp of Adobo sauce
Mango Salsa
- 2-3 whole mangos, peeled and cubed (pit removed)
- 2 tbsp fresh squeezed lime juice
- 2 tbsp finely chopped cilantro
- 2 tbsp finely chopped red onion
- tiny pinch of salt
For the Salmon
Preheat oven to 425F
Put the salmon on a parchment lined baking sheet, skin side down
Make sure the salmon is dry (pat down with paper towel if need be).
Dot the top of the salmon with butter pieces
Bake the salmon for 8 minutes and remove
Top the salmon with glaze and bake for about 2-3 minutes longer until just done.
