Maple Chipotle Glazed Salmon with Mango Salsa

I had some mangos that were ripe that I needed to use up, and that is what inspired me to make this Maple Chipotle Glazed Salmon with Mango Salsa. Jack & Coke BBQ Sauce

This Jack & Coke BBQ Sauce was created in an attempt to come up with a great summer BBQ sauce. I had made BBQ sauces before with the addition of Jack Daniels, which had me thinking about a Jack and Coke. That’s where the inspiration came from. The addition of orange juice and zest brightens everything up and chipotle peppers at a smoky hint of spice. Make a double batch and keep some on hand for all your grilling needs this summer. Tortilla Soup

There are many different versions of Tortilla Soup. Feel free to improvise this recipe to your taste. Simple, warming, and delicious. Best garnished of course with crispy corn tortillas, and I also love to add in some cilantro, feta, and if I have them sliced avocadoes. A little squeeze of fresh lime juice brightens things up perfectly. I have used dried Pasilla Chiles in this recipe, which is sometimes hard to find here in our normal grocery stores in Canada. I buy mine at the Mexican Market close to our house, but you could also likely order them online if you are in a more remote area. They are also…
