    Tis the season! Here’s a treat for the Back to School lunchbox! This is another great recipe from one of my new Whitewater Cooks cookbooks! I can already tell these will be added to my favourite ‘go to’ cookbook collection – so far every recipe I have tried has been a hit! I left out the nuts from the original recipe because I’m not a huge fan of nuts in my muffins – but feel free to add in 3/4 cup of walnuts and in the original recipe she also topped the muffins with 1/2 cup toasted pumpkin seeds prior to throwing in the oven.     The electrician came today!!  Woo hoo! Dance of joy!  Our dishwasher is officially hooked up!  Although the majority of our kitchen has been done for the past week we were still waiting on an electrician to come in to hook up a few things (most importantly the dishwasher) – geesh I forgot how much work it was to wash all those dishes each day!     Radishes I feel are somewhat of an under appreciated, underused vegetable.  I found a beautiful Rainbow Radish Mix that I picked up at our grocers this week and I was trying to think of a use for them, so not to waste. I decided to make quick pickled radishes – these take minutes to make and would be a great addition to sandwiches, tacos – or even just a few on your plate.  Crunchy and refreshing – lets not forget the humble radish.
