Tis the season! Here’s a treat for the Back to School lunchbox! This is another great recipe from one of my new Whitewater Cooks cookbooks! I can already tell these will be added to my favourite ‘go to’ cookbook collection – so far every recipe I have tried has been a hit! Mediterranean Eggplant, Chickpea, Farro and Za’atar Salad
2 more days and the kids are back to school! It’s hard to believe summer has already come to an end – and we are already feeling the cooler fall temps! Summer is much too short in Alberta. I have the next couple days off and am taking it to catch up around the house and maybe do a little lunchbox baking and just get organized for next week when it’s back to schedules and running the kids around. BBQ Chicken Pizza
I’m trying to use up what we have in our freezer, and I had taken out a package of ground chicken this morning that we bought from a local farmer this year. Quick Pickled Radishes
Radishes I feel are somewhat of an under appreciated, underused vegetable. I found a beautiful Rainbow Radish Mix that I picked up at our grocers this week and I was trying to think of a use for them, so not to waste. I decided to make quick pickled radishes – these take minutes to make and would be a great addition to sandwiches, tacos – or even just a few on your plate. Funky Farro Salad with Necatarines Hazelnuts and Mint
I have an overflow of nectarines in my fridge right now and was trying to find a way to use them up when I thought of this salad idea. If you haven’t tried Farro before it’s worth a shot. It’s healthy and has a nutty flavour and chewy texture. I had trouble finding it in Bonnyville but our health food store in town actually brought a case in for me.
