This simple Zucchini Corn Salad with Herby Dressing was what I came up with today in an attempt to use up some zucchini we had in the fridge. It would be a great salad for the end of summer when everyone is trying to find ways to use up plentiful amounts of zucchini. This would be great too topped with a few pistachio nuts if you have some. I didn’t today and since I’m trying not to always be running back and forth to the grocery store these days, I decided to go without. You could leave the vegetables raw for this, but I decided to roast the zucchini a…

Mushroom Poblano Tacos
If you haven’t noticed, I love Mexican food. I could eat tacos for breakfast, lunch, and dinner and be very happy about it. These mushroom poblano tacos are one of my favorites! A great vegetarian dish too! I like to add a little bit of cream at the end of the cooking process to the mushrooms mixture and let it cook down a little, I think it compliments the mushrooms well. If you don’t have cream though, don’t fret, these would be good without it as well. We made Homemade Corn Tortillas and tomatillo salsa to go along with these. These are really simple to make and great with ice-cold Mango…

Cheesy Chickpeas with Tomato and Dill
Having a well-stocked pantry is wonderful when you need to improvise for a quick meal with just a few ingredients. I like to keep canned beans and canned tomatoes on hand and I use them both frequently. These Cheesy Chickpeas with Tomato and Dill use up canned tomatoes and canned chickpeas and make a satisfying and healthy quick supper. I was getting low on groceries today, and for some reason, I had an excess supply of canned chickpeas. I figured, I had better use some of them up, and there are only so many hummus recipes you can do. That was the inspiration for this dish. I added dill in…

Zucchini Rolls with Ricotta, Dill and Parmesan
Zucchini rolls stuffed with ricotta, parmesan, and dill and then baked in delicious garlic-infused tomato sauce dotted with gooey mozzarella. Served hot out of the oven with some fresh basil. Such a delicious and light summer dish! In fact, it tastes like the essence of summer in a bowl! A friend of mine was in town the other day visiting Calgary, so I took her on a few tours of some of my favorite spots, including the Saskatoon Berry Farm and the Avenida Food Hall. I was inspired by the beautiful market produce and brought home a pile of amazing garden-fresh veggies. I love this time of year when the…

Beautiful Easter Salad
Why not celebrate the holidays with this beautiful Easter Salad. Of course, it doesn’t need to be Easter in order to make this, it is simply what I named it as I made it for Easter. One of my favorite things about Easter is that spring weather is on its way! Which means the end to a long Alberta winter! If you live in Alberta, you know what I am talking about. The promise of spring brings warmer weather, budding leaves, and backyard BBQs! A much-needed break from snowy winter. I was having some my the ladies over this Easter weekend and wanted something I could make in advance so…

Summer Rolls with Spicy Peanut Sauce
These Summer Rolls with Spicy Peanut Sauce are one of my favorite appetizers to serve when the weather warms up. Light and refreshing and of course even better when you get to dip them in an addictive peanut sauce. You can pretty much put any veggies that you like in these Summer Rolls with Spicy Peanut Sauce. Feel free to add in some protein here too, shrimp, chicken or pork, whatever you like really. The only thing I wouldn’t leave out is the fresh herbs, they really add such a nice bright flavor to these. If you have a peanut allergy, these are also good dipped in a sweet chili…

Roasted Brussel Sprouts with Honey and Harissa
Roasted Brussel sprouts with Honey and Harissa are a great quick and easy side dish. Brussels sprouts have definitely come a long way from when I was first introduced to them. Back in the day, they were mostly served boiled…and boiled for much too long. They lacked a little something back then. Personally, my favorite way to cook them is roasted as I love the flavor that roasting them brings. Toss halved Brussel sprouts in a little olive oil, salt, and pepper and roast them at around 425F on a sheet pan. They are wonderful with bacon. Parmesan, as you can imagine, is another worthy addition. I also enjoy them…

Roasted Cauliflower with Pomegranate and Tahini
This Roasted Cauliflower with Pomegranate and Tahini is a quick and easy side dish. Cauliflower has made a real comeback lately and is far from how you may remember having it as a child. People are making cauliflower into ‘rice’, ‘pizza crust’ and all sorts of weird concoctions. But cauliflower can shine on its own as well as it lends itself to so many flavours. This Roasted Cauliflower with Pomegranate and Tahini, drizzled with some lemony tahini dressing is a great way to highlight this versatile veggie. Pomegranates add some sweetness and color and fresh herbs brighten everything up. I’ve also drizzled this with pomegranate molasses which is a middle…
