This delicious Roasted Red Pepper Soup is a perfect meal for company and is good served either hot or cold. Smoky roasted red peppers, garlic, onion, and tomatoes are highlighted here with some fresh corn, crumbled feta, and cilantro oil. The chicken stock may be substituted with veggies stock for a vegetarian version. I often hit the library up for cookbooks. I have quite a large collection here and my husband keeps reminding me that we really don’t need anymore! So in order to curb my craving for new foodie reads the library has been a great option for me to check out a bunch of books and get my…

Healthy Homemade Ramen with Chicken
This Healthy Homemade Ramen with Chicken is quick and easy to make and the kids love it! Back in the day when I used to eat Ramen, it was the packaged store-bought instant noodles. Ahhh the Ramen of my teenage years. In fact, even when I first moved away from home, this quick instant meal did sometimes make an appearance. I don’t buy those anymore, thankfully. I’m sure they have like zero nutritional value, and homemade ramen is pretty simple to make using a good chicken broth, with a few lovely additions and is far superior in taste and nutrition. I made homemade chicken broth the other day to use…

Tomato Soup with Lentils and Caraway
This Tomato Soup with Lentils and Caraway is a simple and delicious soup. Caraway really compliments the tomatoes. Comfort in a bowl. I made the other day using up the bits of veggies I had left in my fridge. These are rough measurements as I didn’t intend to blog this, but the soup turned out really yummy so I thought I would still share. San Marzano tomatoes are a little extra cost-wise, but I think the flavour is worth the extra dollars. Also, use real Parmigiano Reggiano for this, it is also worth the dollar for the flavour. Save your rind, I like to actually freeze my parmesan rinds as…

Garlic Soup with Sourdough Croutons
This Garlic Soup with Sourdough Croutons is really wonderful. Made from very simple and minimal ingredients. I should note though that the quality of your ingredients matters in simple recipes like this. So make sure you have some decent olive oil for this and some good red wine vinegar, and please don’t use stale paprika. Remember spices don’t last forever…if you have had your paprika in your cupboard for over a year, it’s time to get rid of it and update with some fresh. Trust me, it will really improve the flavor. This recipe is adapted slightly from one by Christopher Kimball, in a book called Milk Street. It’s a…

Tortilla Soup
There are many different versions of Tortilla Soup. Feel free to improvise this recipe to your taste. Simple, warming, and delicious. Best garnished of course with crispy corn tortillas, and I also love to add in some cilantro, feta, and if I have them sliced avocadoes. A little squeeze of fresh lime juice brightens things up perfectly. I have used dried Pasilla Chiles in this recipe, which is sometimes hard to find here in our normal grocery stores in Canada. I buy mine at the Mexican Market close to our house, but you could also likely order them online if you are in a more remote area. They are also…

Sonoran Cheese Soup
One of my absolute favorite cuisines to cook and eat is Mexican. Sometimes misunderstood here in Canada, but authentic, true Mexican food is so flavourful and diverse. Please put away those old El Paso taco kits and give some of the more authentic recipes a try if you haven’t already. You won’t be disappointed. This Sonoran Cheese Soup is a really delicious place to start. This soup is slightly adapted from a recipe by Pati Jinich, who is a sweet Mexican chef that makes the most amazing and easy to prepare dishes. Patti Jinich Cookbook Sonora, if you aren’t familiar is in Northern Mexico, I’ve never been but apparently they produce…

Kuching Style Laska
Who doesn’t like a bowl of a hot spicy noodle soup? If you do, you need to try this Kuching Style Laska. Just a warning this soup is a ‘labor of love’. If you want a simple and quick recipe I would recommend you try my Simple Miso Noodle Soup My husband and I have been watching the Parts Unknown series with Anthony Bourdain on Netflix lately. It’s a really well done series if you haven’t watched it yet. Ever since we’ve been watching Anthony has had us craving a bowl of hot and spicy noodle soup. You often see him somewhere in southeastern Asia, sitting on a small plastic…

Chicken Tortilla Soup with Avocado and Lime (Whitewater Cooks)
OK first don’t laugh at my poorly staged picture. It’s been busy around here – I haven’t felt like I’ve had time really to update this site – but I loved this simple easy to prepare soup and figured I would try to share the recipe tonight – bad picture and all! Life has caught up with us lately now that the kids are back to school and activities the calendar seems to fill up quickly and us parents are left pretty tired by the end of most days! In fact my husband and I sometimes have trouble staying up past 10 – we are definately getting old. I’ve been…
