Carbonara has to be one of my favorite pasta dishes of all time. Not only is it delicious, it’s also super quick to make with minimal ingredients that you may just have laying around already. When you feel like something indulgent, this is it! My boys actually used to fight for seconds when I made this. So if you have growing teenagers, you may want to double this recipe…otherwise, this should serve about 4 people (or 1 teenage boy). In my opinion, there are a few key ingredients to making a good carbonara. The first being good pasta (my favorite brands for this are Barilla or De Cecco). You also…

Orecchiete with Baby Kale and Pancetta
This was kind of one of those – just wing it pasta recipes. I find pasta is great when you don’t have much time to mess around in the kitchen. I made this Friday night after a long day baking cupcakes for my friends wedding – and it was a delicious and fast dish! Note – you can use all Pancetta or all Bacon for this recipe – I just used both because I had a little of each in my fridge. Oriccehiete means ‘little ears’ in italian because the pasta is shaped this way. I found a package at a gourmet grocers in the city – but if you…

Linguini Puttanesca with Zuchinni
It’s been a crazy week! We were awoken in the wee hours this morning by my oldest two boys telling us that it was flooding from our roof into our basement…not a fun thing to wake too. So I spent the day dealing with insurance, plumbers, flood repair guys, no water. It’s been a long day! Although with much news lately of dear friends going through serious health issues and the many other numerous problems throughout the world – we are still able to count our blessings – as many things in life could be much worse! So I’m putting it into perspective and enjoying the fact that I have…

Tasty Taco Stuffed Shells
Oh My! I have a kitchen again! After a long two months of renovations I was sooooo happy to have a kitchen back this weekend. It was awesome. I’m in love. I told my husband I feel like a princess and I just wanna hang out in there all day it’s so pretty! Yep – it was a great weekend. My husbands family decided to come up for an impromptu visit so it gave me a great excuse to hang out in the kitchen and cook and entertain..my mother in law was really sold by the end of the weekend that I deserved this grand kitchen and would put it…

Linguini Shrimp Fra Diavolo
Stay tuned friends. I have decided to go back to blogging. I’m hoping one day that something will transition to enable me to doing something with ‘doing what I love’ which is cooking, creating, inspiring. For now, I just aim to continue to create, share and journal my love of all things food and cooking. We are renovating our kitchen! Yes, I currently have no kitchen – so probably not the best of times to decide to start back up with my blog. Thankfully it’s summertime here in Alberta so the BBQ has been a lifesaver, but I cannot wait until this whole renovation project is finished – fingers crossed…

Signapore Noodles (Jamie Oliver)
This was a great quick supper and another great way to use up leftovers. If you have bits of meat leftover (Chicken, Pork, Steak) or even to use up veggies in your fridge – you could really throw in whatever your heart desires. I will give you the original recipe written by Jamie Oliver – but feel free to improvise – I did. You could also make this vegetarian if you prefer. I was able to use up leftover pork in ours – along with ground pork that I had on hand. I substituted cilantro for the green onions (because I had no green onions and had cilantro to use…

Spaghetti with Kale, Swiss Chard, Feta and Poached Egg
If you know me, you know that I absolutely ADORE pasta! Yes – I have even been known to have it for breakfast in place of toast…not good right – is that why my jeans are fitting a little snug? All jokes aside I am trying to find healthier ways to feed my pasta addiction on occasion when I wish – and I think I found the perfect dish. I have been experimenting with different pastas and I picked up a Organic Brown Rice Spaghetti the other day and thought I would give it a whirl to see if it was any good. Surprisingly it was awesome!! Here are my…

Fettucine with Artichokes (Fettuccine Con Carciofi)
We have started some of the renos on our house…new lights today. Slowly but surely we will update. It is amazing how much just new light fixtures make a difference. Since the electrician was here longer than anticipated, I wanted to make something quick and easy for supper..what better than pasta for that. This recipe is courtesy of David Rocco. You should really try to use fresh artichokes for this recipe if you can find them, and have the time (I have included the original recipe for your use)..sadly we live in a remote area in Alberta and it is pretty hard to find decent fresh artichokes, so I substituted in…

Asian Inspired Peanut Noodle Salad with Hoisin Lime Marinated Pork Chops
I have to admit, I haven’t felt much like cooking at all this week. With alot going on, the pizza place has been on speed dial at my house. Headed to Calgary in a few days for spring break with the kids to visit family and friends..on the countdown for a much needed break and visit. Decided I had better step out of my slump tonight and use up some of the food in the fridge, because my husband will be here working for a week…and he tends to not cook much while we are gone, better leave the pizza place on speed dial for him. This is what I came…

“Hungry Kid” Mac and Cheese with Chicken and Bacon
“Hungry Kid” Mac and Cheese with Chicken and Bacon is one of the older recipes on my site, back from when I first started food blogging and had no idea how to take pictures or properly format this site. Although this is still a great recipe, if you have time, check out some of my new stuff like this Cacio e Pepe with Arugula or the Best BBQ Pulled Pork Sammies I have learned a lot in the last few years. I never realized how little I measured before until I started this blog. This “Hungry Kid” Mac and Cheese with Chicken and Bacon was just what we needed today…
