    Finger Lickin’ Apricot Chicken

    April 29, 2011 / No Comments

This is a perfect weeknight meal for all you busy Mom’s out there.  I got this recipe, years ago from my Mom, and it is an old standby that the kids love..for one of those nights when you just want something super simple to prepare for supper.  There are hardly any ingredients, and you may just have all these hanging out in your cupboard. This was one of those nights for me, I had no idea what I was going to make for supper – busy day, just wanted something quick and simple that the kids would enjoy. The sauce recipe – makes enough to coat roughly 10 chicken drumsticks..I…

Pizza Night – Our Family’s Favorite Pizza Dough

    April 19, 2011 / No Comments

Friday nights are usually Pizza nights at our place – the kids look forward to it as do I.  Sometimes I will just use Naan bread for our pizza base (that you can buy in the grocery stores), but if I make the crust – this is my favorite dough recipe for pizza that I have found so far. This Friday, my husband was away for an annual hockey tournament in the city, so my friend and her kids came over for pizzas and we took the kids out for a movie night.  As for the toppings…well my kids are fairly boring when it comes to toppings….cheese…occasionally meat..yep that’s it..as…

Fettucine with Artichokes (Fettuccine Con Carciofi)

    April 14, 2011 / No Comments

We have started some of the renos on our house…new lights today.  Slowly but surely we will update.  It is amazing how much just new light fixtures make a difference. Since the electrician was here longer than anticipated, I wanted to make something quick and easy for supper..what better than pasta for that. This recipe is courtesy of David Rocco.  You should really try to use fresh artichokes for this recipe if you can find them, and have the time (I have included the original recipe for your use)..sadly we live in a remote area in Alberta and it is pretty hard to find decent fresh artichokes, so I substituted in…

    Tasty Chipolte Chicken Taco Bowls

    April 12, 2011 / No Comments

Spring Break is over and the kids are back to school, back to routine.  The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted.  I can’t wait to see the leaves on the trees and the flowers growing again. My kids absolutely love tacos…and so do I.  Although I love to add onions, peppers, even beans to my meat mixture…the kids aren’t so fond of that. So my solution – two pans…one with meat…plain for the kids…and the other for Alex and I – with the meat and whatever my heart desires…added in…

Asian Inspired Peanut Noodle Salad with Hoisin Lime Marinated Pork Chops

    March 31, 2011 / No Comments

I have to admit, I haven’t felt much like cooking at all this week.  With alot going on, the pizza place has been on speed dial at my house.  Headed to Calgary in a few days for spring break with the kids to visit family and friends..on the countdown for a much needed break and visit.  Decided I had better step out of my slump  tonight and use up some of the food in the fridge, because my husband will be here working for a week…and he tends to not cook much while we are gone, better leave the pizza place on speed dial for him. This is what I came…

“Hungry Kid” Mac and Cheese with Chicken and Bacon

    March 23, 2011 / No Comments

“Hungry Kid” Mac and Cheese with Chicken and Bacon is one of the older recipes on my site, back from when I first started food blogging and had no idea how to take pictures or properly format this site. Although this is still a great recipe, if you have time, check out some of my new stuff like this Cacio e Pepe with Arugula or the Best BBQ Pulled Pork Sammies I have learned a lot in the last few years. I never realized how little I measured before until I started this blog. This “Hungry Kid” Mac and Cheese with Chicken and Bacon was just what we needed today…

Fish “Tacos” in Pitas with Kick-Butt Creamy Dressing

    March 16, 2011 / No Comments

This recipe is improvised from a few different recipes.  I found the white sauce (dressing) recipe online…thought I would try it drizzled over our fish “taco’s” in pitas (I used pitas instead of tortillas, because that is what we had on hand).  The sauce turned out fabulous! Definately will make that one again.  Would be great in a chicken pita too.  Has a little kick to it (so you have to enjoy a little spice to enjoy this one).  Then I marinaded my fish in a marinade Bobby Flay used for his fish.  I usually use Mahi Mahi for fish tacos, but the cod was what we had, and it turned…

    Beef Bourguignon with Porcini Mushrooms

    March 2, 2011 / No Comments

This is a stew that is in my mind comfort food at it’s finest.  Pair with a nice loaf of crusty bread and a glass of wine…so delicious.  You could also serve this over mashed potatoes and with a green salad.  Perfect for company, because it goes in the oven hours in advance and you can keep warm or reheat (gives you ample time to clean up and relax before everyone comes). Be sure that you use a wine that you would drink for this recipe (when you cook the flavor will intensify, so you don’t want to use a crappy wine).  I used a cabernet sav. as a dry wine…

Chicken Breasts with Fig Onion Sauce over Brown Basmati Rice Pilaf

    February 18, 2011 / No Comments

OK so this title sounds way fancier than it actually is.  I had 3 chicken breasts left in my fridge so I marinated them this morning in the following: Chicken Marinade (for three breasts) – 1/3 cup Extra Virgin Olive Oil – 1/6 cup Red Wine Vinegar (half the amount of the oil) – 3 garlic cloves, sliced thin – couple sprigs of fresh thyme – 1 tsp dried basil – 1 tsp dried oregano Then tonight when we got home from hockey I threw some brown basmati rice in our rice cooker using half chicken broth and half water for the liquid measurement (I know most of you can cook rice so I won’t include…

Quick Chicken and Portabella Mushroom Sauce

    February 17, 2011 / No Comments

Hockey last night, so in a rush to make a quick dinner for the boys.  Came up with this idea as I had some chicken and mushrooms in the fridge.  Turned out pretty good..although the boys picked out the mushrooms.  Wished I had some fresh parsley in the fridge to finish off (this would be a nice addition) but still good without too.  – 3 chicken breasts diced – 2 portabella mushrooms cleaned and stems and gills removed – approx 1/3 cup flour + 2 tbsp – Fresh Thyme (4-5 sprigs) – 1 medium onion diced – 2 cloves garlic, minced – 1 cup chicken stock – 1/2 cup half and half cream – 1 tbsp brandy – 1…
