Spring Break is over and the kids are back to school, back to routine. The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted. Fish “Tacos” in Pitas with Kick-Butt Creamy Dressing
This recipe is improvised from a few different recipes. I found the white sauce (dressing) recipe online…thought I would try it drizzled over our fish “taco’s” in pitas (I used pitas instead of tortillas, because that is what we had on hand). The sauce turned out fabulous! Definately will make that one again. Would be great in a chicken pita too. Has a little kick to it (so you have to enjoy a little spice to enjoy this one). Beef Bourguignon with Porcini Mushrooms
This is a stew that is in my mind comfort food at it’s finest. Pair with a nice loaf of crusty bread and a glass of wine…so delicious. You could also serve this over mashed potatoes and with a green salad. Perfect for company, because it goes in the oven hours in advance and you can keep warm or reheat (gives you ample time to clean up and relax before everyone comes).
