I love homemade corn tortillas. I often will make these for taco night around here. They are really simple to make at home. What you need to make Homemade Corn Tortillas You only need two ingredients to make these Corn Tortillas. Masa Flour and Water. That’s it! I do salt my flour a little bit so I guess 3 ingredients if you include that. It is also handy to have a tortilla press. If you don’t have one, you could use a rolling pin, or even a heavy-bottomed pan to press the dough. You also need a little plastic wrap or plastic food bags to cover your press so that…

Easy Rosemary Focaccia Bread
This easy rosemary focaccia bread is so easy to make. Just a few simple ingredients and you can have a beautiful homemade focaccia bread in no time! We’ve had a very challenging week around here, but things are feeling a bit more hopeful today, thankfully. It’s a rainy day here today, so I thought it might be a good day to ‘nest’ a little and do a bit of baking. This focaccia bread recipe comes from the Epicurius website Rosemary Olive Focaccia Bread. I didn’t really change much except for leaving out the olives from their recipe and adding salt on top instead. Olives would be wonderful here, but my…

The Best Pumpkin Muffins
When I say The Best Pumpkin Muffins, I mean my favorite. The best is a little overused at times. But this is a really solid and delicious recipe. I feel like somewhere along the way, someone must have developed the idea of muffins as a way to enjoy cake for breakfast. Brilliant idea is all I have to say to that! These are great to have on hand for the kid’s lunchbox, or for a quick grab and go snack. They aren’t too sweet, but satisfyingly sweet enough. It may be a bit late for a pumpkin recipe. I know everyone kind of goes crazy with pumpkin everything in the…

Homemade Naan
Once you make this Homemade Naan bread for the first time, you will definitely want to make it again. Super easy to make and so soft and chewy and delicious. These would be perfect to accompany a nice bowl of curry, or I am using ours tonight as the base for a middle eastern style wrap. We like serve ours drizzled with some garlic butter and fresh herbs while they are still hot. I also like to put little nigella seeds on the Naan (which are crunchy with a flavour similar to toasted onions) but if you don’t have them don’t worry these are still great without. This makes 8…

Easy and Quick Homemade Buns
I’ve been using this recipe for Easy and Quick Homemade Buns for some time now. It’s super easy and comes together quick! I usually double the recipe, because the boys eat these up rather quickly around here so feel free to double the recipe as well if you have ravenous teenagers at your place too! You can sub out some of the white flour for whole wheat if you like. – 1 envelope of instant yeast – 1 1/4 cup warm water – 1/3 cup oil (I used olive oil) – 1/4 cup sugar (you could sub honey, just reduce the amount by a little) – 1 egg – 1…

Pumpkin Chocolate Chip Muffins
Tis the season! Here’s a treat for the Back to School lunchbox! This is another great recipe from one of my new Whitewater Cooks cookbooks! I can already tell these will be added to my favourite ‘go to’ cookbook collection – so far every recipe I have tried has been a hit! I left out the nuts from the original recipe because I’m not a huge fan of nuts in my muffins – but feel free to add in 3/4 cup of walnuts and in the original recipe she also topped the muffins with 1/2 cup toasted pumpkin seeds prior to throwing in the oven. These aren’t overly sweet which…

Crazy for Panini’s
I purchased a Panini Maker this month – after much time debating whether or not I would use one – or if it would be added to a collection of unused kitchen appliances cluttering up my cupboard. I’m so happy I decided to do it. Turns out this is an awesome appliance for quick dinners and really easy for the kids to use when Mom’s not around to cook. Also – although most times I find sandwiches extremely boring – Panini’s can bring out the creativity in you – as so many combinations would be delish! I just had to share my pretty picture of a lunch last week –…

Whole Wheat Healthy Banana Chocolate Chunk Muffins “AKA Muffin Madness”
Well my good friend and I decided to get together this afternoon – armed with a few stand mixers (geesh those are heavy to transport) and a few choice ingredients, to fill our freezers full of healthy muffins for the kids for school lunches (to fufill our mission to cut down on processed packaged convenience foods). We made these muffins, and some pumpkin ones….these ones turned out best – definately a recipe we will use again. Here’s one for the lunch box Mom’s that you can feel good about. This is also from Clean Eating but I switched out the oil and used Coconut Oil, also I used whole eggs,…

“Mom, You Should Make This Every Day” (Chocolate Banana Bread)
This recipe is courtesy of a blog called Evil Shenanigans (a good baking blog if you are interested). Saw this recipe for chocolate banana bread…and wondered why I have not ever thought of that before…we have added chocolate chips..but this looked even better..it turned out moist and delicious and my youngest Andrew, thinks that we should “make this every day”. So yet another banana bread recipe… CHOCOLATE BANANA BREAD 1 1/2 cups packed light brown sugar1/2 cup canola oil2 eggs, at room temperature1 egg yolk3 ripe bananas, mashed 1 1/2 cups all-purpose flour1/3 cup cocoa powder1/4 teaspoon cinnamon1 teaspoon salt1 teaspoon baking soda1/2 teaspoon baking powder1/3 cup very strong coffee, at…

Banana Loaf
I know every Mom for sure likely has a banana loaf/muffin recipe. I tend to try new ones each time, but this one I really enjoyed and have made a couple times this month. Great for the lunchbox for kids. You could add nuts to it, I don’t simply because with all the food allergies these days the kids can’t bring nuts to school anymore. This recipe is improvised from a recipe out of the Culinary Institute of America Cookbook…a great cookbook, I should add. I always put my overripe bananas (skins and all) in the freezer) – they actually keep well this way just take them out and thaw for…
