Funky Farro Salad with Necatarines Hazelnuts and Mint
I have an overflow of nectarines in my fridge right now and was trying to find a way to use them up when I thought of this salad idea. If you haven’t tried Farro before it’s worth a shot. It’s healthy and has a nutty flavour and chewy texture. I had trouble finding it in Bonnyville but our health food store in town actually brought a case in for me. Easter weekend is approaching quickly, and since we are headed out for the holidays to visit family and friends, I have been trying to not shop for groceries and use up what we have in our fridge before we go. I had some Gorgonzola cheese in the fridge that I had to use up, so I decided to make this Cobb Salad with Lemon Dill Dressing. I love the presentation of a Cobb Salad – great for a summertime supper on the patio (although we still have snow on the ground here). Just a couple quick blogs before the weekend…I couldn’t resist. Bought a Dragonfruit yesterday because they are so unique looking, and Andrew and I thought we would try it today.
