SAUCES AND DIPS

Salsa Ranchera

Salsa Ranchera is a great basic tomato-based table sauce that can be used to serve with tacos, huevos rancheros, or just served with corn chips! I roughly use a classic…

Spicy Asian Chicken Noodle Soup with Bok Choy and Tofu

    September 9, 2011 / No Comments

Busy week, now that I am a working girl.  It is exciting to be back in the workforce and I am super excited about my new career.  I have been spending lots of time this week trying to soak up as much information as I can.  This blog, will surely have to take a back seat to my other commitments.  But hey, I still enjoy writing on here.  Actually it is kind of nice to refer back to recipes on here, so I will try to continue to post a couple times a month or so, time permitting. I had to include this on here, because I just really was…

    Corn Zuchinni Lime Pizza

    August 29, 2011 / No Comments

I was supposed to have salad for dinner…well that didn’t work out.  This recipe is sooooo good.  If you are looking for a change from the same old pepperoni and mushroom…you have to try this.  The picture does not do this dish justice. My husband borrowed my camera so this was taken with my blackberry – so not the best quality shot. Tonight is the last night before the boys are back to school.  We were out and about today shopping for last minute school stuff and I decided I would make homemade pizzas tonight for supper. I found this idea for toppings on another blog called shutterbean.  I will include…

Soup’s On! – my first attempt at Borscht

    August 26, 2011 / No Comments

I really made a mess of my kitchen this morning….let’s just say 1 broken crockpot….beet juice splashing….yep..I should really clean up. First be warned…although my photos are really not that spectactular to begin with..my husband has my camera today…so no pictures – sorry folks! School starts Monday here (Hooray!).  My boys are at the point where I believe they are starting to get on eachothers nerves, and so lately I have felt like a referee..let’s just say I will be happy for them to be back to routine again.  I also start a new career this fall – this will be interesting, since I have not worked for about 6…

Veggie Burgers in Pita’s with Tzatziki

    August 18, 2011 / No Comments

I was excited to get a copy of Gwyneth Paltrow’s new cookbook “My Father’s Daughter” last week upon reccomendation from a friend.  It is a great book if you are in to simple, healthy recipes. Tried out my first recipe from the book tonight which I tweaked, just a little.  They were great.  After a busy summer of socializing, eating and drinking I tend to always try to eat healthier near the end of summer beginning of fall (since all my clothes begin to fit rather tightly).  Of course my boys truly frowned at the idea of veggie burgers…so these were just for me (and my husband if I can…

    Strawberry Honeyberry Jam

    August 1, 2011 / 2 Comments

What a great day!  Checked out a Berry Farm close to our house, for some berry picking with the boys.  We picked Strawberries and Honeyberries….so absolutely delish!  The strawberries were so sweet and it was such a great experience for the kids.  The place we went does not use pesticides which is great too. Once we had all the berries home (the ones that made it here anyway) – not sure how many strawberries the boys devoured on the ride home.  Eating strawberries like this really makes you realize how crappy the grocery store strawberries really are. This is only the second time I have made jam and I the…

    Tuna Loins with Sesame Dressing

    August 1, 2011 / No Comments

The picture doesn’t do this dish much credit.  It was so good, and so quick and easy to make.  You could have a healthy supper on the table in 15 minutes…I swear. This dish requires shashimi grade tuna (if you can find it) so that you can leave the centre nice and rare.  It only takes a few minutes to cook the dish. I seasoned my tuna loins with Montreal Steak Seasoning and then seared in a nice hot pan in some olive oil.  Once finished place the tuna steak on top of some nice organic mixed greens, and drizzle with the sesame dressing.  The dressing is really good, don’t…

Jessie’s Famous Oatmeal Chocolate Chip Cookies

    July 6, 2011 / No Comments

My sister Jessica makes the BEST Cookies!!  Truly, they are soo delish.  I have tried many different chocolate chip cookie recipes and have not been able to find one yet that I like more than hers. We were at a family reunion this weekend, and had such a great time.  It was so nice to reconnect with everyone.  The weather was great and the company was even better.  My sister brought her “famous” cookies this weekend to share, and I just knew after devouring one that it was due time to ask for the recipe. Back at home, and trying to catch up on laundry and house stuff before heading out again for my…

Vietnamese Salad Rolls with Mango and Shrimp

    June 24, 2011 / No Comments

I made these yesterday.  Spent the morning working on assignments, was able to finish 3 of 4 assignments, which I was pretty happy about.  Decided to give my brain a rest for the rest of the day and enjoy the sunshine.  It was beautiful weather here yesterday. I love these salad rolls.  I usually only make them in the summer time, they are great because you don’t need to turn the oven on and they are refreshing on a hot sunny day.  My kids, however – refuse to try these..so they ended up eating Macaroni and Hot Dogs – they really don’t know what they are missing.  But oh well – more for…

Chocolate Torte with Frangelico, Rasberries and Whipped Cream

    June 22, 2011 / No Comments

Firstly I must say after devouring a piece of this, that this recipe is “to die for”.  My kids and I all loved it – a definate keeper for sure…now I only wish I had made two! This recipe is courtesy of Best of Bridge.  The only alteration that I made was to substitute Frangelico (a hazelnut liquor) for the Grand Marnier.  Personally I don’t care for the chocolate/orange flavour combination, but if you do, by all means use Grand Marnier for this or even Orange Juice if you don’t want to use alcohol.  I personally love Frangelico, so I went with this instead. I don’t often make desserts –…

I haven’t posted a recipe in a long while.  I apologize to those of you that are waiting for new recipes and enjoy reading.  Life has been so busy lately that I haven’t really had the time. Today is the first day of summer, and after about a week of rain – the sun is shining which is so nice!  The kids are almost done school and soccer, and I am almost done my real estate license which I have been working on for the last few months, one exam left to write and we can relax and enjoy summer holidays – I can’t wait. I am sure many of…
