Stay tuned friends. I have decided to go back to blogging. I’m hoping one day that something will transition to enable me to doing something with ‘doing what I love’ which is cooking, creating, inspiring. For now, I just aim to continue to create, share and journal my love of all things food and cooking. We are renovating our kitchen! Yes, I currently have no kitchen – so probably not the best of times to decide to start back up with my blog. Thankfully it’s summertime here in Alberta so the BBQ has been a lifesaver, but I cannot wait until this whole renovation project is finished – fingers crossed…

Curry Night! Veggie Curry (Keralan) and Beef Kofta
I think that Jamie Oliver and I may be long lost soulmates. I mean not in a romantic way but I think we’d get along well. I loved his last cookbook I purchase a few weeks back so much that I picked up his other new book titled, Jamie’s 15 Minute Meals. Just flipping through the pictures had me drooling – while at the same time wondering if I could really pull some of these dishes together that quickly. I like Jamie’s style of cooking, not fussy but with maximum flavour and great ingredients. Tonight I thought I’d give a couple of his curries in the book a whirl. We’ve…

Signapore Noodles (Jamie Oliver)
This was a great quick supper and another great way to use up leftovers. If you have bits of meat leftover (Chicken, Pork, Steak) or even to use up veggies in your fridge – you could really throw in whatever your heart desires. I will give you the original recipe written by Jamie Oliver – but feel free to improvise – I did. You could also make this vegetarian if you prefer. I was able to use up leftover pork in ours – along with ground pork that I had on hand. I substituted cilantro for the green onions (because I had no green onions and had cilantro to use…

Leftover Magic – Spiced Beef Morrocan Beef Tagine (Jamie Oliver)
OK Seriously I think I have found the answer to boring leftover roast beef leftovers! Jamie Oliver’s new cookbook rocks so far. This is the second recipe I have tried and it has impressed me even more than the first! Some serious flavour and a really easy dish with gorgeous presentation and taste – would be a great dish for company. If you know me, you know that I own way too many cookbooks. My Mom once told me that I should consider lending them out like a library – OK so everyone has collections don’t they? I actually really enjoy flipping through them for inspiration and ideas – and…

Hit ‘N’ Run Panbaked Chicken (Jamie Oliver)
I have decided to attempt to find time to update my blog! It’s been a long while since I posted and I still have friends saying they visit my blog on occasion for recipes and wish I would post some new material. I have to admit I still refer back as well when I don’t feel like digging through recipe books. 31 Hockey games this month! Yes that’s how many we counted between the 3 boys! It’s been pretty hectic around here trying to juggle work, hockey, housework, cooking, the never ending piles of laundry – yes it’s all been quite the whirlwind. I’m on the countdown until April when…

Spaghetti with Kale, Swiss Chard, Feta and Poached Egg
If you know me, you know that I absolutely ADORE pasta! Yes – I have even been known to have it for breakfast in place of toast…not good right – is that why my jeans are fitting a little snug? All jokes aside I am trying to find healthier ways to feed my pasta addiction on occasion when I wish – and I think I found the perfect dish. I have been experimenting with different pastas and I picked up a Organic Brown Rice Spaghetti the other day and thought I would give it a whirl to see if it was any good. Surprisingly it was awesome!! Here are my…

Corn Zuchinni Lime Pizza
I was supposed to have salad for dinner…well that didn’t work out. This recipe is sooooo good. If you are looking for a change from the same old pepperoni and mushroom…you have to try this. The picture does not do this dish justice. My husband borrowed my camera so this was taken with my blackberry – so not the best quality shot. Tonight is the last night before the boys are back to school. We were out and about today shopping for last minute school stuff and I decided I would make homemade pizzas tonight for supper. I found this idea for toppings on another blog called shutterbean. I will include…

Veggie Burgers in Pita’s with Tzatziki
I was excited to get a copy of Gwyneth Paltrow’s new cookbook “My Father’s Daughter” last week upon reccomendation from a friend. It is a great book if you are in to simple, healthy recipes. Tried out my first recipe from the book tonight which I tweaked, just a little. They were great. After a busy summer of socializing, eating and drinking I tend to always try to eat healthier near the end of summer beginning of fall (since all my clothes begin to fit rather tightly). Of course my boys truly frowned at the idea of veggie burgers…so these were just for me (and my husband if I can…

Tuna Loins with Sesame Dressing
The picture doesn’t do this dish much credit. It was so good, and so quick and easy to make. You could have a healthy supper on the table in 15 minutes…I swear. This dish requires shashimi grade tuna (if you can find it) so that you can leave the centre nice and rare. It only takes a few minutes to cook the dish. I seasoned my tuna loins with Montreal Steak Seasoning and then seared in a nice hot pan in some olive oil. Once finished place the tuna steak on top of some nice organic mixed greens, and drizzle with the sesame dressing. The dressing is really good, don’t…

Pad Thai with Baby Bok Choy and Edamame
Mother’s Day weekend here and I had taken out some shrimp last night from the freezer, left to defrost in our fridge. Was trying to decide what to do with them for supper tonight…when I remembered Pad Thai…has been awhile since I have made Pad Thai…found a new recipe that I had not tryed before, and it will definately be my go to recipe – turned out great!! This recipe is courtesy of Mitchell Davis from a cookbook called Kitchen Sense (a great cookbook I might add). The only thing I changed was I added in some baby bok choy to the mixture and I used jumbo black tiger shrimp (probably…
