I wanted to make a wrap for lunch today that included my yummy tabouleh salad that I had made yesterday. Unfortunately I was out of wraps at the house. I decided I would use rice paper wraps and wrap up the tabouleh in that – I made a Tahini Dressing to accompany them using a recipe from my new Jeruselem cookbook. Vietnamese Salad Rolls with Mango and Shrimp
I made these yesterday. Spent the morning working on assignments, was able to finish 3 of 4 assignments, which I was pretty happy about. Decided to give my brain a rest for the rest of the day and enjoy the sunshine. It was beautiful weather here yesterday. I love these salad rolls. “Oh So Easy” Chicken Wings
Sometimes simple is best…I often find that in the kitchen. We had company over this weekend, and I had a package of wings leftover from the weekend that had to be put to use tonight. 2 boys have soccer tonight, so I wanted something quick that the boys could eat before we hit the soccer field tonight. Hoisin Chicken Lettuce Wraps
This post name comes from my husband, who mentioned after devouring a few of these, that peanuts would be nice here…hmmm good idea honey. Shrimp in Thai Coconut Sauce
This recipe is another one adapted from a Best of Bridge recipe. This is the first time I tried this recipe, so I made pretty much as directed, with a few exceptions. I upped the amount of cilantro, and decreased the amount of coconut and increased the amount of garlic and shrimp. You can change up the filling for these egg rolls however you like. This is a vegetarian version, but you can add shrimp, chicken or whatever combo of veggies you like. This recipe is originally from a Best of Bridge Cookbook. The original recipe calls for ground chicken or turkey for the meat (which I have had and that is really good too), I used ground pork because that is what I had and they were very yummy with pork too (the chicken or turkey would be leaner though). We had a similar version of these at my Mom’s this Christmas. For those of you that have visited my parents house on Christmas Eve, you know the food is always fabulous, my Mom puts a ton of work into it and we always look forward to indulging in all her fantastic creations.
