In one pan, add your eggs in oil and cook until sunny side up.
In another pan, heat up a bit of oil. Add in your tomatillo salsa. Fry for a minute or two then add in your corn chips. Once done layer in your cooked eggs. Top with feta, cilantro and serve with cream drizzled over and avocado slices.
Tomatillo Salsa
Put your tomatillos, garlic, water, and serrano on a sheet pan and roast under the broiler until roasted and charred, flipping half-way through. About 5-10 minutes
Put your tomatillos, garlic, salt, and serrano (remove the stem) in a blender.
Puree until smooth.
Stir in your cilantro and onion. Taste and adjust salt if needed.
