Oh Fridays..how I love thee! It has been a crazy busy week around here. For those of you that are Canadian, you know it’s that time of year…and no I am not speaking of the Royal Wedding…Tax Season!! In fact…I hate doing taxes so much that I would prefer to do almost anything else, hence the reason, they will be late this year…ugghh. Anyway, needless to say – I get to spend a fun filled weekend preparing paperwork for our accountant – and then will happily hand it over to him..only to have another year off until I have to think about taxes again. My kids absolute favorite thing that…

Finger Lickin’ Apricot Chicken
This is a perfect weeknight meal for all you busy Mom’s out there. I got this recipe, years ago from my Mom, and it is an old standby that the kids love..for one of those nights when you just want something super simple to prepare for supper. There are hardly any ingredients, and you may just have all these hanging out in your cupboard. This was one of those nights for me, I had no idea what I was going to make for supper – busy day, just wanted something quick and simple that the kids would enjoy. The sauce recipe – makes enough to coat roughly 10 chicken drumsticks..I…

Cheesy Cream of Broccoli Cauliflower Soup
Has been awhile since my last blog post. Been very busy around here with Easter, taxes, school and soccer season starting up for the boys. Our first soccer practice of the season tonight, so I wanted something quick and easy for supper tonight. Decided to make the kids chicken quesidillas with a bowl of soup on the side. I had originally planned to make just a broccoli cheese soup, but I didn’t quite have enough broccoli in the fridge – and I had some cauliflower, so I decided to use both. Turned out very delish – and was a hit with all the kids. The cheese is optional (if you…

Cleaning out the Fridge – Couscous Salad
Easter weekend is approaching quickly, and since we are headed out for the holidays to visit family and friends, I have been trying to not shop for groceries and use up what we have in our fridge before we go. This isn’t really a recipe (well with exact measurements anyway), but you can really toss in what you like to this mixture. I will roughly tell you how I made mine. Great for lunch – or for a supper side dish. Couscous – is so quick and easy to make. I like to use chicken stock (for the liquid component), because I find it adds more flavour. You just need…

Pizza Night – Our Family’s Favorite Pizza Dough
Friday nights are usually Pizza nights at our place – the kids look forward to it as do I. Sometimes I will just use Naan bread for our pizza base (that you can buy in the grocery stores), but if I make the crust – this is my favorite dough recipe for pizza that I have found so far. This Friday, my husband was away for an annual hockey tournament in the city, so my friend and her kids came over for pizzas and we took the kids out for a movie night. As for the toppings…well my kids are fairly boring when it comes to toppings….cheese…occasionally meat..yep that’s it..as…

Hoisin Chicken Lettuce Wraps
This post name comes from my husband, who mentioned after devouring a few of these, that peanuts would be nice here…hmmm good idea honey. My husband doesn’t cook much, mostly because he works ridiculous hours and is hardly here…but I have to admit, after sprinkling some crushed peanuts over these to finish – they really hit the spot! I also garnished these with some fresh julienned basil (the basil was a last minute idea – and I am so glad that I added, really complimented the flavours…oh and of course – don’t forget the crushed peanuts (idea courtesy of Zander). My Mom used to make these when we had people…

Fettucine with Artichokes (Fettuccine Con Carciofi)
We have started some of the renos on our house…new lights today. Slowly but surely we will update. It is amazing how much just new light fixtures make a difference. Since the electrician was here longer than anticipated, I wanted to make something quick and easy for supper..what better than pasta for that. This recipe is courtesy of David Rocco. You should really try to use fresh artichokes for this recipe if you can find them, and have the time (I have included the original recipe for your use)..sadly we live in a remote area in Alberta and it is pretty hard to find decent fresh artichokes, so I substituted in…

Tasty Chipolte Chicken Taco Bowls
Spring Break is over and the kids are back to school, back to routine. The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted. I can’t wait to see the leaves on the trees and the flowers growing again. My kids absolutely love tacos…and so do I. Although I love to add onions, peppers, even beans to my meat mixture…the kids aren’t so fond of that. So my solution – two pans…one with meat…plain for the kids…and the other for Alex and I – with the meat and whatever my heart desires…added in…
