    Shrimp in Thai Coconut Sauce

    March 8, 2011 / No Comments

This recipe is another one adapted from a Best of Bridge recipe.  This is the first time I tried this recipe, so I made pretty much as directed, with a few exceptions.  I upped the amount of cilantro, and decreased the amount of coconut and increased the amount of garlic and shrimp.  These are supposed to be an appetizer, but I think they work well as a main course over some basmati rice..it makes alot of sauce so I upped the shrimp count from 30 to 40 or so, and there was still plenty of sauce to go around.  Also, if you enjoy a little spice, I would increase the…

    Vegetarian Egg Rolls

    March 7, 2011 / No Comments

You can change up the filling for these egg rolls however you like.  This is a vegetarian version, but you can add shrimp, chicken or whatever combo of veggies you like.  I have never attempted to make my own egg roll wrappers, and I doubt that I will – you can buy them conviently in most grocery stores now. My boys love chinese food.  I like it too, but unfortunately we live in a remote area, without a decent chinese restaurant…so I just make my own.  You can too, these are really simple. For the filling:  – 2 1/2 cups bean sprouts – 2 1/2 cups chopped napa cabbage – 8 mushrooms, chopped –…

    Vietnamese Meatballs

    March 7, 2011 / No Comments

This recipe is originally from a Best of Bridge Cookbook.  The original recipe calls for ground chicken or turkey for the meat (which I have had and that is really good too), I used ground pork because that is what I had and they were very yummy with pork too (the chicken or turkey would be leaner though).  Don’t skip rolling them in sugar, this makes a delish caramelized crust. Ingredients:  – 1 lb ground pork, chicken or turkey  – 1/4 cup chopped fresh cilantro  – 2 green onions, finely chopped  – 1Tbsp grated lemon zest  – 2 tsp cornstarch  – 1 tsp minced gingerroot  – 3 tbsp soy sauce…

    Pogaca (Turkish Stuffed Buns)

    March 7, 2011 / No Comments

I saw this recipe on another blog (called giverecipe), from a Turkish lady.  Thought I would give it a shot.  They turned out really good, and the filling possibilities are endless really.  I followed the recipe as directed, but filled half of them with ham and cheese for the ‘kids version’ and I topped theirs with toasted sesame seeds rather than poppyseeds, I used the original for Alex and I.  These would be great stuffed with pizza fillings, other cheeses, meats, really whatever you like!  A keeper recipe for sure.  I have also seen this recipe using yogurt in the dough mixture, I may try this next time too.  I…

    Dragonfruit Mache Salad

    March 4, 2011 / No Comments

Just a couple quick blogs before the weekend…I couldn’t resist.  Bought a Dragonfruit yesterday because they are so unique looking, and Andrew and I thought we would try it today.  Dragonfruit, if you haven’t tried it, tastes almost like a cross between a kiwifruit and a pear.  Andrew ate his plain cut up, he was interested in the unique color. As for me, I made a quick salad for lunch.  Also have been using a new green lately that I found at the grocery called Mache.  It has a very mild taste, I love it.  If you don’t have it though, spinach would be nice with this, or a variety…

Belgian Endive with Goat Cheese, Almonds and Dried Cranberries

    March 3, 2011 / No Comments

We had a similar version of these at my Mom’s this Christmas.  For those of you that have visited my parents house on Christmas Eve, you know the food is always fabulous, my Mom puts a ton of work into it and we always look forward to indulging in all her fantastic creations.  These look great and are so simple and quick to make.  The first time I had them, we used candied pecans (instead of almonds) and drizzled with a reduced balsamic.  I changed it up a bit this time, but either way is great. This is not an exact recipe….you don’t need one  – Belgian Endive leaves – dried cranberries – peppered…

    Beef Bourguignon with Porcini Mushrooms

    March 2, 2011 / No Comments

This is a stew that is in my mind comfort food at it’s finest.  Pair with a nice loaf of crusty bread and a glass of wine…so delicious.  You could also serve this over mashed potatoes and with a green salad.  Perfect for company, because it goes in the oven hours in advance and you can keep warm or reheat (gives you ample time to clean up and relax before everyone comes). Be sure that you use a wine that you would drink for this recipe (when you cook the flavor will intensify, so you don’t want to use a crappy wine).  I used a cabernet sav. as a dry wine…

    Mustard Sauce (for Ham)

    March 1, 2011 / 1 Comment

This Mustard Sauce for Ham is a tried and true recipe that we have used in our family for many years. My Mom used to make it all the time and serve it with Ham with Scalloped Potatoes on the side. It is great the next day too for ham buns. It’s funny because this is one of the most popular recipes on my blog on google search, even though it was posted back in the early days before I took pretty pictures and recipe cards etc. Please take a minute to have a look at some great new recipes like this Jack & Coke BBQ Sauce or these Mozza Stuffed…
