It’s the weekend, and although we have a jammed packed weekend of carting my youngest son off to hockey games, and I had to work a little showing some lovely clients homes in the area, I did manage to sneak in a good 4 hours at home this Saturday afternoon. Although I really should have been cleaning my house…I decided to rummage through the fridge instead and try to figure out a few meals worth of the remaining groceries to be used up. It was actually rather productive. I like to rummage through my fridge just before a grocery shop and see how I can use up what is remaining.…

Chicken Tortilla Soup with Avocado and Lime (Whitewater Cooks)
OK first don’t laugh at my poorly staged picture. It’s been busy around here – I haven’t felt like I’ve had time really to update this site – but I loved this simple easy to prepare soup and figured I would try to share the recipe tonight – bad picture and all! Life has caught up with us lately now that the kids are back to school and activities the calendar seems to fill up quickly and us parents are left pretty tired by the end of most days! In fact my husband and I sometimes have trouble staying up past 10 – we are definately getting old. I’ve been…

Smoky Chipolte Corn Chowder with Pancetta
The weather is starting to cool down in Bonnyville. It feels like Fall is on it’s way! I don’t mind Fall weather actually I love the cool crisp air and the colors of the leaves as they change, the only thing I don’t like is the reminder that dreaded winter is just around the corner…and our winters in Alberta are just too long! Colder temperatures always have me thinking of a nice hot bowl of soup. My middle son Jared’s favorite soup that I make is Corn Chowder – since corn is in season right now and there is an abundance of it – I thought it would be a…

Spicy Asian Chicken Noodle Soup with Bok Choy and Tofu
Busy week, now that I am a working girl. It is exciting to be back in the workforce and I am super excited about my new career. I have been spending lots of time this week trying to soak up as much information as I can. This blog, will surely have to take a back seat to my other commitments. But hey, I still enjoy writing on here. Actually it is kind of nice to refer back to recipes on here, so I will try to continue to post a couple times a month or so, time permitting. I had to include this on here, because I just really was…

Soup’s On! – my first attempt at Borscht
I really made a mess of my kitchen this morning….let’s just say 1 broken crockpot….beet juice splashing….yep..I should really clean up. First be warned…although my photos are really not that spectactular to begin with..my husband has my camera today…so no pictures – sorry folks! School starts Monday here (Hooray!). My boys are at the point where I believe they are starting to get on eachothers nerves, and so lately I have felt like a referee..let’s just say I will be happy for them to be back to routine again. I also start a new career this fall – this will be interesting, since I have not worked for about 6…

Cheesy Cream of Broccoli Cauliflower Soup
Has been awhile since my last blog post. Been very busy around here with Easter, taxes, school and soccer season starting up for the boys. Our first soccer practice of the season tonight, so I wanted something quick and easy for supper tonight. Decided to make the kids chicken quesidillas with a bowl of soup on the side. I had originally planned to make just a broccoli cheese soup, but I didn’t quite have enough broccoli in the fridge – and I had some cauliflower, so I decided to use both. Turned out very delish – and was a hit with all the kids. The cheese is optional (if you…

Mom’s Famous French Onion Soup
My oldest son Jayden was home sick from school today, so I thought I would make him some soup. Jayden’s absolute favorite soup that I make is my French Onion. I have to say it tops pretty high on my list of favorites too. Perhaps because it is topped with loads of gooey cheese…yep that plays a big part. Actually recently Jayden and I were out with friends for lunch here in Bonnyville, and we both ordered the French Onion soup…and sadly we were both dissapointed – big time..it tasted like the broth was made with beef bouillion cubes (please don’t use those for this recipe) and it was soo…

Homemade Won Ton Soup
Had bought a rotisserie chicken to make sandwiches for the boys the other day, so I saved the carcass and decided to make some chicken stock this morning. I then decided to make some asian dumplings to make a won ton soup as I had some groud turkey in my fridge and some won ton wrappers. I usually make dumplings with ground pork (I would have to say we still prefer ground pork – the kids didn’t like the turkey ones as much) but you can use ground chicken or turkey as we did for a leaner alternative. For the stock (I made just a basic chicken stock to begin…

Morrocan Chickpea Soup
Cold snowy day here in Northern Alberta. Thought I would try a new soup recipe…turned out fantastic. – 1 large diced onion – 4 cloves minced garlic – 1 tsp cinnamon – 1 tsp cumin – 1 tsp paprika – 1/4 tsp cayenne pepper – 1 14 oz can diced tomatoes – approx. 3 cups chicken broth – 2 14 oz cans chickpeas (drained and rinsed) In a large saucepan, heated up with a couple tbsp of olive oil saute onions and garlic until translucent. Add spices and stir for another minute or so. Add tomatoes, broth and chickpeas. Bring to a simmer, simmer on low for 45 mins. Use a pototoe masher to mash some of the…
