We are prepping for ‘Taco Tuesday’ here today by making these Pickled Red Onions. When did that become a thing? Truthfully, we have taco’s whenever we feel like it around here, whether it’s Tuesday or not, but it did make it easier when I was thinking of what to make for supper tomorrow. This is a very simple recipe. I’ve been doing a few ‘condiment’ recipes the last couple of days, they are great recipes to have in your repertoire though as they can add great punch and flavor to simple dishes. Tomorrow we are having Slow Cooker Pork ‘Chilorio’ Tacos, and these red onions go perfectly with them. The…

Tortilla Soup
There are many different versions of Tortilla Soup. Feel free to improvise this recipe to your taste. Simple, warming, and delicious. Best garnished of course with crispy corn tortillas, and I also love to add in some cilantro, feta, and if I have them sliced avocadoes. A little squeeze of fresh lime juice brightens things up perfectly. I have used dried Pasilla Chiles in this recipe, which is sometimes hard to find here in our normal grocery stores in Canada. I buy mine at the Mexican Market close to our house, but you could also likely order them online if you are in a more remote area. They are also…

Sonoran Cheese Soup
One of my absolute favorite cuisines to cook and eat is Mexican. Sometimes misunderstood here in Canada, but authentic, true Mexican food is so flavourful and diverse. Please put away those old El Paso taco kits and give some of the more authentic recipes a try if you haven’t already. You won’t be disappointed. This Sonoran Cheese Soup is a really delicious place to start. This soup is slightly adapted from a recipe by Pati Jinich, who is a sweet Mexican chef that makes the most amazing and easy to prepare dishes. Patti Jinich Cookbook Sonora, if you aren’t familiar is in Northern Mexico, I’ve never been but apparently they produce…

Black Bean Tostadas with Roasted Tomato Salsa
I love these Black Bean Tostadas with Roasted Tomato Salsa. These would be great made with my Homemade Corn Tortillas If you haven’t noticed yet, I’m pretty obsessed with Mexican food. My husband and I have visited Mexico many times now and besides the beautiful weather, friendly people, and beautiful ocean my most favorite thing about Mexico is the food! Some of the best food we have had on our trips has been from the little roadside stands and family-run joints. You can seriously find some delicious and inexpensive treats if you venture out of your comfort zone. These Black Bean Tostadas with Roasted Tomato Salsa are a great vegetarian option…

Roasted Vegetable Enchiladas with Creamy Tomatillo Sauce
I’ve been on a bit of a ‘Mexican Kick’ lately and these Roasted Vegetable Enchiladas with Creamy Tomatillo Sauce are worth you joining the Mexican food bandwagon with me. My husband and I just recently visited Cabo San Lucas and our Sobey’s here in town just started selling tomatillo’s….so it was pretty much meant to be! When I’m looking for some authentic Mexican flavor Rick Bayless is one of my go-to resources. I am usually very happy with any of his recipes and it brings me back to our travels throughout Mexico. This one is no exception. You can make these with chicken too if you aren’t into the vegetarian…

Mexican Baked Eggs
We leave for Hawaii in two weeks! Hooray! Since we’ll be sporting swimsuits for a good portion of our stay my husband has been trying to watch his carb and sugar intake this month. I’ve been trying to help him out by making meals minus carbs – which as it turns out although challenging – can be very delicious. Last night we had some fish tacos with Mahi Mahi and rather that tortilla wraps we wrapped ours in lettuce leaves – which proved to be delish. On the weekend I made Alex this for breakfast and decided to re-create this morning for myself. Give them a shot! This is kind…

Tasty Chipolte Chicken Taco Bowls
Spring Break is over and the kids are back to school, back to routine. The weather has been super nice here the last couple days, it is so nice to feel like spring has finally arrived..almost all the snow has melted. I can’t wait to see the leaves on the trees and the flowers growing again. My kids absolutely love tacos…and so do I. Although I love to add onions, peppers, even beans to my meat mixture…the kids aren’t so fond of that. So my solution – two pans…one with meat…plain for the kids…and the other for Alex and I – with the meat and whatever my heart desires…added in…
