Mango Margaritas are one of my favorite drinks to enjoy when I’m visiting Mexico. These ones are slushy, ice-cold, and sweetened with honey simple syrup. I prefer the slushy kind of Margarita as it feels like a delicious grown-up Slurpee and is very refreshing on a hot day. Lemongrass Chicken Satay with Coconut Rice
Delicious Lemongrass Chicken Satay grilled on the BBQ and served with a spicy peanut dipping sauce all over a bed of creamy coconut rice.
