These are seriously my absolute favorite Breakfast Sammies. The recipe is not my own for the sausage patties, and I’ve included a link to the cookbook they are in, in case you are interested.
The boys and I love breakfast sandwiches! Who doesn’t really! Toasted buns, melty cheese, avocado slices, runny yolk eggs, and these homemade sausage patties. Served up with some hot sauce it is a breakfast that dreams are made of.
A great weekend breakfast when you aren’t in a rush to get out the door, which I suppose most of us aren’t lately.
I call this the Best Breakfast Sammies- because this is my absolute favorite! Better yet this is so easy to make.
Homemade sausage patties are what take this sandwich up a notch. I found this recipe in the Cravings cookbook by Chrissy Teighan and right away wanted to make these delicious sausage patties. I had never thought to simply make patties from scratch with ground pork and just a few spices added in, brilliant idea Chrissy! We double the original recipe (because I have hungry boys around here). I also make the patties a bit smaller than the original recipe called for. I’m posting it as I make it, but feel free to halve the recipe if you have fewer mouths to feed.
You can make these patties ahead of time and freeze. Just defrost before cooking. separate them with parchment paper and wrap well to freeze ahead.

Best Breakfast Sammies
Ingredients
Sausage Patties
- 1 lb ground pork
- 1/2 cup finely minced onion
- 2 tbsp light brown sugar
- 4 cloves garlic, minced
- 1 tbsp ground sage poulty seasoning iblend s a great substitution
- 1 tbsp red hot pepper flakes
- 1 tbsp kosher salt
- 1 tsp fresh ground pepper
To serve
- Toasted buns (buttered and topped with shredded cheese) - put under the broiler
- avocado slices
- eggs (runny yolks)
- hot sauce optional
Instructions
- To make the sausage patties, combine all the ingredients in a bowl and mix. Don't overmix, just until combined.
- Form the sausage mixture into small patties ( this yeilds about 12)
- In a cast iron skillet or pan coated with oil, over medium heat, fry up your patties. A couple of minutes per side should do.
- Prep your toast, eggs and avocado
- On your toasty buns with cheese, pile in your egg, sausage pattie and avocado. Serve with hot sauce on the side.
