Mexican Shrimp Cocktail

Ingredients
  

  • 1.5 lbs cooked shrimp, medium size
  • 1/2 cup chopped cilantro
  • 1/2 cup finely chopped cucumber, seeds removed
  • 1/2 cup finely chopped red pepper
  • 1/2 cup white onion, finely chopped
  • 1-2 whole small cloves garlic, minced fine
  • 1 whole tomato, seeds removed and diced
  • 1/2 cup fresh squeezed lime juice
  • 1/4 cup fresh squeezed orange juice
  • 1/2 cup ketchup
  • 1/2 cup clamato juice
  • 1 whole serrano pepper, finely chopped
  • 1 whole avocado, diced
  • hot sauce to taste
  • salt to taste
  • pepper to taste
To serve
  • hot sauce
  • saltine crackers
  • lime wedges

Method
 

  1. Place shrimp and chopped veggies in a large bowl. Mix with the citrus juices, ketchup, clamato and seasonings. Gently toss well.
  2. Serve chilled in nice margarita glasses with lime wedges, saltine crackers and extra hot sauce.
