Best BBQ Pulled Pork Sammies

When my husband tried these tonight he declared that they were the Best BBQ Pulled Pork Sammies he had ever tasted! I had to agree that they were pretty darn good! The kids really enjoyed them too – you know they love it when they all come back for seconds!

I love making pulled pork in the slow cooker. It’s great for tacos or pulled pork sandwiches and best of all it’s pretty much hands-off cooking for the majority of the day. I use pork shoulder when making pulled pork as it has enough fat in it to break down until pull-apart tender. The other great thing about pork shoulder is it’s a pretty affordable cut of meat.

This also freezes beautifully.

Jack & Coke BBQ Sauce

I wanted to create a good BBQ sauce for summertime and I think I came up with a winner! I put a little Jack Daniels and decided it might be fun to sweeten the sauce with Coke. You know like Jack & Coke. Don’t worry as the alcohol will cook out during the cooking process. A little orange juice and zest brightened the sauce up nicely and a bit of chipotle added a bit of smoky heat. I think this recipe is a keeper! The ingredients are a bit lengthy, but make a double batch and save half for BBQ ribs later in the week!

Slaw & Toppings

I’ve topped the BBQ Pulled Pork Sammies with a bit of a simple slaw – which simply was a mix of finely shredded cabbage, shredded carrots and a few sprouts I had in the fridge tossed with a little olive oil, lime juice, honey and a bit of salt and pepper to taste.

We also like to serve these with Pickled Red Onions and Pickled Jalapenos

Cooking the Pork

Cooking the pulled pork couldn’t be simpler. Place a pork shoulder into a slow cooker with a chopped onion and a couple of cloves of smashed garlic. Put a bit of smoked paprika, salt, and pepper on the pork. Turn the slow cooker on low and cook for 6-8 hours. until tender. Shred with a fork. Put the pulled pork into a large pan and add in the BBQ sauce. Let it cook and reduce a little, then serve it up in toasty buns with simple slaw, pickled jalapenos, and pickled red onions if you like.

Best BBQ Pulled Pork Sammies

Jack & Coke BBQ sauce coats delicious pulled pork to make the Best BBQ Pulled Pork Sammies ever! Top with crunchy slaw and pickled jalepenos!

Ingredients
  

Pulled Pork

  • 1 large pork shoulder
  • 1 onion, sliced
  • 2-3 cloves garlic, smashed
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • salt
  • pepper

Jack & Coke BBQ Sauce

  • 2 tbsp vegetable oil
  • 10 cloves garlic, minced
  • 3/4 cup finely chopped onion
  • 2-3 chipolte in adobe peppers + a tsp or so of the adobe sauce
  • 1/3 cup Jack Daniels
  • 2/3 cup Coca Cola
  • 1/3 cup freshly squeezed orange juice + the zest of one
  • 1 cup ketchup
  • 1 tbsp worcestershire sauce
  • 1/4 cup maple syrup
  • salt to taste
  • pepper to taste

To serve

  • Toasted Buns
  • Pickled Jalepenos
  • Simple Slaw
  • Pickled Red Onions

Instructions
 

Pulled Pork

  • Place the pork in a slow cooker with the onion and garlic.
  • Sprinkle over the smoked paprika and a healthy sprinkle of salt and pepper. Add in the chicken broth.
  • Turn the slow cooker on low and cook until fork tender for 6-8 hours.
  • Shred and toss in a pan with the BBQ sauce. Let sauce cook and reduce for a few minutes or so with the shredded pork.
  • Serve it up on toasted buns with coleslaw, pickled jalepenos, and pickled red onion if you like.

For the BBQ Sauce

  • In a saucepan over medium heat put in the oil. Add in the onions and saute until soft.
  • Add in the garlic and cook for about a minute.
  • Add in the Jack Daniels and let cook for about a minute.
  • Add in the rest of the ingredients. Let simmer and reduce for awhile. Taste and add a bit of salt and pepper as needed.
