Spicy Korean Cucumber Kimchi

Post two this morning comes from another Pinterest recipe Spicy Korean Cucumber Kimchi I’ve been meaning to try. Geesh look what happens when I clean out my refrigerator!  I love the feeling of nothing going to waste.

My friend Brent usually brings me some cucumbers each summer from his Dad’s garden.  I just happened to have another large bag of these on hand and decided to give this recipe a try.

For me Kimchi was not a ‘Love at First Sight” thing.  When I lived in Calgary years ago, I used to house exchange students – and the majority of them were from Korea.  That was my first introduction to Kimchi, which I have to say must be an acquired taste. But once you love it you will actually crave it on occasion.  I’m told it’s good for you – so even more the reason to give these a try.
