Tonight was my Husband’s Birthday – I call him Zander – his actual name is Alex – anyway – we usually treat birthdays at our place with a good homecooked meal.

Can I start with Dessert?
I first had Pavlova at Christmas one year. My Brother In Law’s Sister made it for us and I thought it was such a beautiful dish! It amazes me how you can transform just a couple simple ingredients into something really special…just a few egg whites and sugar. I love it topped with loads of fresh whipped cream and tons of berries or seasonal fruit. Tonight I topped ours with Kiwi, Strawberries, and Raspberries.
This base recipe is from Whitewater Cooks (the one for rolled Pavlova) – I just served differently
All you need:
3 egg whites (at room temperature)
1 1/2 cups white sugar
1 tsp vanilla
1 1/2 tsp vinegar
2 tbsp water
To Top:
Whipped Cream
Berries or Fruit of choice
Beat your egg whites until stiff. Add water and beat for another 2-3 minutes. Add your sugar 1/2 cup at a time, beating well after each addition and scraping bowl occasionally. Add vinegar and vanilla and beat until mixture is thick and shiny (about 5 minutes)
Spread mixture evenly onto a baking sheet lined with parchment paper (don’t let mixture touch edge of sheet)
Bake for 20 minutes at 350 until light brown with a firm crust.
Let cool well at room temperature.
Top with whipped cream and berries and serve.
