Spring has arrived. The weather has been great here the last few days – I find sunshine and nice weather – just instantly puts you in a good mood. I was excited today to see some of my perennials beginning to poke through..tulips are coming up – and buds are on the trees! If you live in Alberta, as I do – this is an exciting time of year, when we finally have a much deserved break from cold weather..and dreary winter. Things have been busy for me around here, finishing off my real estate license, I will be so happy when my exams are all finished…cooking is a nice…

Pad Thai with Baby Bok Choy and Edamame
Mother’s Day weekend here and I had taken out some shrimp last night from the freezer, left to defrost in our fridge. Was trying to decide what to do with them for supper tonight…when I remembered Pad Thai…has been awhile since I have made Pad Thai…found a new recipe that I had not tryed before, and it will definately be my go to recipe – turned out great!! “Oh So Easy” Chicken Wings
Sometimes simple is best…I often find that in the kitchen. We had company over this weekend, and I had a package of wings leftover from the weekend that had to be put to use tonight. 2 boys have soccer tonight, so I wanted something quick that the boys could eat before we hit the soccer field tonight.
