This post name comes from my husband, who mentioned after devouring a few of these, that peanuts would be nice here…hmmm good idea honey. My husband doesn’t cook much, mostly because he works ridiculous hours and is hardly here…but I have to admit, after sprinkling some crushed peanuts over these to finish – they really hit the spot! I also garnished these with some fresh julienned basil (the basil was a last minute idea – and I am so glad that I added, really complimented the flavours…oh and of course – don’t forget the crushed peanuts (idea courtesy of Zander).
