Quick Pickled Radishes

Radishes I feel are somewhat of an under appreciated, underused vegetable.  I found a beautiful Rainbow Radish Mix that I picked up at our grocers this week and I was trying to think of a use for them, so not to waste.

I decided to make quick pickled radishes – these take minutes to make and would be a great addition to sandwiches, tacos – or even just a few on your plate.  Crunchy and refreshing – lets not forget the humble radish.

I found this recipe on a site called Garden Therapy.  The only thing I switched out was the vinegar.  It called for apple cider vinegar which I didn’t have on hand – so I substituted with white wine vinegar instead. We are serving these up tomorrow on some fish tacos – with crunchy slaw and avocado.  Stay tuned!

  • 1 bunch thinly sliced round radishes
  • 3/4 cup water
  • 3/4 cup apple cider vinegar
  • 1 1/2 teaspoons sea salt
  • 3 tablespoons honey
  • 2 whole, peeled garlic cloves
