Tuna Poke Bowls

I love Tuna Poke Bowls! My husband and I fell in love with Poke a few years back when we were in Hawaii. In fact, I think we had it EVERY single day of our trip after our first introduction. If you haven’t tried it yet, you really should. It is so good.

My youngest son and I often have these bowls as a quick lunch or supper. He absolutely loves sushi, so this is a great little quick bowl to make if you don’t want to pay to eat out or mess around with rolling sushi rolls at home. We picked up some sushi-grade tuna on the way home from hockey practice today and I had some leftover rice in the fridge, so this little lunch came together in no time. Great for a weeknight meal. This amount serves 2 but feel free to double or triple for a crowd.

FOR THE POKE:

 – 1/2 pound of sushi-grade fish (tuna, salmon, etc.), chopped into cubes

 – 1/8 cup soy sauce

 – 1 Tbsp sesame oil

 – 1 tsp fresh grated ginger

 – 1 tsp or so of fresh lime juice to taste

 – sliced green onion (to taste if you have them)

 – Toasted sesame seeds for garnish

MIX the fish with the dressing ingredients to coat

 

FOR THE BOWLS

 – Cooked sushi rice

 – Veggies of choice (today we used: cucumbers, grated carrot, pea shoots, avocado

Garnish ideas: Nori, Toasted Sesame Seeds, Pickled Ginger, Cilantro

Place your cooked rice in a bowl. Layer up with some sliced veggies of choice and top with your Poke. We like to serve up with a bit of spicy sriracha mayo and soy sauce and garnishes.

FOR THE SRIRACHA MAYO:

 – Mix together about 1/4 cup of mayo with a tsp of sesame oil and a tbsp of sriracha sauce
