I wanted to make a wrap for lunch today that included my yummy tabouleh salad that I had made yesterday. Unfortunately I was out of wraps at the house. I decided I would use rice paper wraps and wrap up the tabouleh in that – I made a Tahini Dressing to accompany them using a recipe from my new Jeruselem cookbook. The turned out great – would be a great summertime light lunch or snack. I was wishing that I had some feta cheese to throw in with these, I think it would make a good addition – by all means throw some in if you have some – see if you like it.
If you haven’t used rice paper wrappers before – they take a little getting used to, but are really easy and quick once you do. I fill a shallow bowl with warm/hot water – lay the wrap in the water and let it soften – then I lay it on a clean kitchen towel to dry a bit. Lay your filling inside just as you would in a tortilla wrap – fold up two short ends and roll it up. I usually have these with Asian style fillings – but this is a great switch up.
The tabouleh recipe is already on my blog, but I will include a recipe for the Tahini sauce that I made. Tahini sauce is great in wraps, pitas, on salads – really a diverse condiment. I love it.
Tahini Sauce (Recipe from Jeruselum Cookbook)
– 2/3 cup light Tahini Paste
– 1/2 cup water
– 2 tbsp freshly squeezed lemon juice
– 1 medium garlic clove, crushed
– 1/4 tsp salt
Mix all together and wallah – enjoy
