Saw this recipe for chocolate banana bread…and wondered why I have not ever thought of that before…we have added chocolate chips..but this looked even better..it turned out moist and delicious and my youngest Andrew, thinks that we should “make this every day”.
So yet another banana bread recipe…
CHOCOLATE BANANA BREAD
1 1/2 cups packed light brown sugar
1/2 cup canola oil
2 eggs, at room temperature
1 egg yolk
3 ripe bananas, mashed
1 1/2 cups all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup very strong coffee, at room temperature
1 teaspoon vanilla
Mix together oil and sugar, add in eggs and blend until light in color. Add in your mashed bananas and stir to combine. Sift together your dry ingredients, add these, coffee and vanilla and mix until just combined. Place in a prepared loaf pan (or two small loaf pans) and bake in a preheated oven at 350F for about 45 minutes (until a toothpick comes out clean or the center springs back when gently pressed). Remove to cooling rack…and enjoy!
