OK, so I have to admit we have indulged in some delish fattening foods over the last couple days (the kids and I even made cupcakes last night) – and how can you pass up cupcakes..really. Anyway, needless to say, I am headed to the gym tonight and I decided to behave and make a nice light salad for lunch today. I found this recipe on another food blog (a great one) called Food Obsessed, I think she originally got the recipe from Canadian Living – it is a keeper. I love the dressing too! I also should admit that I didn’t like fennel the first time I bought it. But last week, while grocery shopping I bought some (determined to try it again), and I believe this salad has converted me – I really enjoyed it this time.
Fennel, Apple and Walnut Salad with Yogurt Poppyseed Dressing
I didn’t have grapes (as the original recipe called for, so I tossed in some dried cranberries (I would say less than they were asking for) – the cranberries are really nice in there, next time I’ll try the grapes.
Ingredients

- 1 cup thinly sliced fennel
- 1 cup sliced celery
- 1 cup red seedless grapes, halved – I used some dried cranberries because I didn’t have grapes
- 2 Red Delicious apples, diced
- ½ cup chopped walnuts
Poppy Seed Dressing
- ½ cup Balkan Style Plain Yogurt
- 2 tbsp liquid honey
- 4 tsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp Poppy seeds
- Pinch salt
- Pinch paprika
Instructions
- For the poppy seed dressing: In a large bowl, whisk together yogurt, honey, lemon juice, mustard, poppy seeds, salt and paprika until smooth.
- Add fennel, celery, grapes (or dried cranberries), walnuts and apple, toss to coat.
- Serve garnished with fennel fronds
