Sesame Noodle Bowls

Servings: 4 people

Ingredients
  

Sesame Dressing
  • 1/4 cup tahini
  • 1/4 cup warm water
  • 1/2 bunch cilantro
  • 1 clove garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp maple syrup
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • Sriracha (to taste)
Veggie Noodle Bowls
  • 225 Grams Spaghettini (or other pasta of choice)
  • finely shredded purple cabbage
  • sauteed asparagus
  • sauteed mushrooms
  • shredded carrots
  • sliced cucumbers
  • cilantro
  • toasted sesame seeds

Method
 

  1. In a food processor, whiz up all the ingredients for the dressing. If you don't have a food processor, chop the herbs, garlic, and ginger fine and mix together wel with the rest of the ingredients. Taste and adjust the seasoning as you like.
  2. Cook the noodles in salted water until al dente. Drain and rinse under cold water.
  3. Toss the noodles in half of the sauce
  4. Layer the bowls with a few noodles and pile in the veggies of choice. Drizzle with a bit more dressing and sprinkle with sesame seeds to serve.
